Whether it’s prepping meats or cheeses, Berkel slicers are some of the best on the market. That’s why everywhere from neighborhood delis to large grocery store chains use them on a daily basis. Maintenance is key to proper operation, which includes keeping the knife sharp. Below are a Berkel slicer sharpening procedures you should follow at least once or twice a year.


825A/E, 827A/E & 832E Instructions



  • Step 1. Turn off the slicer – Switch the unit into the OFF position, and unplug the power cord.

  • Step 2. Close the gauge plate – Turn the thickness control knob to the right to fully close the gauge plate.

  • Step 3. Clean the knife – Wipe down the knife from the center towards the outside edge of the blade. Don’t move your hand towards knife’s edge.

  • Step 4. Prepare the sharpener – Loosen the locking knob on the sharpener. Raise and rotate the sharpener so that the stones sit on each side of the knife. Then, fasten the knob to hold the sharpener, so it’s in the proper sharpening position.

  • Step 5. Turn on the slicer – Plug in the power cord, and switch the unit into the ON position.

  • Step 6. Start the sharpening process – Press the sharpening stone push-button to bring the stone against the knife. Hold it for about 5-10 seconds and release. Once the sharpener is in the correct position, the sharpening stone push-button will be on the knife’s left side.

  • Step 7. Start the deburring process – Press the deburring stone push-button to bring the stone against the knife. Hold it for about 2-3 seconds and release. Once the sharpener is in the correct position, the deburring stone push-button will be on the knife’s right side.

  • Step 8. Turn off the slicer – Switch the unit into the OFF position, and unplug the power cord.

  • Step 9. Return the sharpener to storage – Follow step 4 in reverse to return the sharpener back to its stored position. Lock it in place.

  • Step 10. Clean the slicer – Follow the cleaning and sanitizing instructions found in your operator’s manual before slicing product.


909A & 919A Instructions



  • Step 1. Turn off the slicer – Switch the unit into the OFF position.

  • Step 2. Change to a manual setting – Change the shift lever to MANUAL.

  • Step 3. Close the gauge plate – Turn the thickness control knob to the right to fully close the gauge plate.

  • Step 4. Remove the product table – Slide the product table in your direction, and loosen the locking knob. Remove the product table. Make sure to keep it level to keep it from sliding and rotating.

  • Step 5. Prepare the sharpener – Using your left hand, lift the sharpener and rotate it into the proper sharpening position. Lower it with one stone on each side of the blade. Then, put your left thumb on the sharper’s cover for control. Pull the sharpener lever with your left index finger all the way until it stops.

  • Step 6. Turn on the slicer – Switch the unit into the ON position using your right hand.

  • Step 7. Start the sharpening process – Hold the sharpener lever by applying moderate pressure for about 5-10 seconds. Release lever. After 15 seconds, the slicer will automatically shut off and need to be restarted.

  • Step 8. Turn off the slicer – Switch the unit into the OFF position using your right hand.

  • Step 9. Return the sharpener to storage – Follow step 3-4 in reverse to return the sharpener back to its stored position. Lock it in place.

  • Step 10. Clean the slicer – Follow the cleaning and sanitizing instructions found in your operator’s manual before slicing product.


X13 & X13A Instructions



  • Step 1. Turn off the slicer – Switch the unit into the OFF position.

  • Step 2. Change the engagement knob to manual – Push the engagement knob in, to the left, on the right side of the support arm.

  • Step 3. Move the product table and close the thickness knob – Slide the product table all the way forward. Fully close the thickness control knob by turning it all the way to the right.

  • Step 4. Prepare the sharpener – Move the top tab on the sharpener into the product table’s slot. Place the bottom sharpener clip over the end of the product table. Then, open the thickness control knob by turning it all the way to the left to expose the knife.

  • Step 5. Turn on the slicer – Switch the unit into the ON position.

  • Step 6. Start the sharpening process – Slowly push the product table toward the knife in similar way you would slice food. When the sharpening and deburring stones touch the knife, hold for 2-3 seconds before pulling the product table back to its original position.

  • Step 7. Turn off the slicer and close the thickness knob – Switch the unit into the OFF position using your right hand. Close the thickness control knob all the way.

  • Step 8. Remove the bottom clip – Unclip the bottom sharpener clip from the product table. Clean the clip in a sink before storing in a drawer.

  • Step 9. Clean the slicer – Follow the cleaning and sanitizing instructions found in your operator’s manual before slicing product.
