Commercial Fryer Troubleshooting-Gas Fryers-Electric Fryers

From onion rings and fries to chicken wings and funnel cakes, commercial fryers are a standard in any commercial kitchen. If they’re used on a daily basis, a few issues can pop up occasionally. The following commercial gas and electric fryer troubleshooting tips in the video and guide below can help you identify common problems quickly on most commercial units.

These are general diagnostic tips for most commercial fryers. Always consult your manufacturer’s operation manual for specific instructions and troubleshooting help for your exact unit.

Pilot Not Lighting or Staying Lit

If the pilot isn’t lighting or staying lit on a commercial gas fryer, look for the potential issues below:


  • Gas supply valve is closed, clogged or not completely open – Open or clean the valve.

  • Orifice is dirty – Clean the area with a stiff brush to remove any debris clogging the outlet hole.

  • Gas hose is disconnected – Reconnect the gas hose properly.

  • Drain valve is closed – The drain valve should be opened, so it allows the pilot light to engage.

  • Thermopile is broken – Contact an authorized technician to repair the issue.

  • High-limit thermostat is broken – Have an authorized technician repair high-limit thermostat.


Burners Not Lighting

If a fryer’s burners that aren’t lighting or staying lit, check for the possible issues below:


  • Gas supply valve is closed, clogged or not completely open – Open or clean the valve.

  • Burner orifice is dirty – Clean the area with a stiff brush to remove any debris.

  • Thermostat is set low – Reset the thermostat to your desired temperature setting.


No Power

If there is no power to the fryer, check for the following electrical issues:


  • Power switch is broken – An authorized technician will need to replace the switch.

  • Power cord is unplugged or broken – Plug in the cord. If it’s broken or showing noticeable damage, have it repaired by an authorized technician.

  • Circuit breaker is tripped – Reset the circuit breaker.


Temperature is Incorrect

  • Thermometer needs to be calibrated – Follow the testing and calibration instructions per your fryer’s operator’s manual.

  • Temperature control knob is loose or broken – Tighten the temperature control knob or have it replaced by an authorized technician.

Unit Not Draining Oil

If the unit won’t drain oil properly, check for issues on the following fryer filtration parts:


  • Obstructed or dirty drain valve – Make sure to remove the obstruction or clean the drain valve.

  • Drain filter is dirty – Clean or replace the filter if there is a thick buildup of grease or food remnants.

  • Filtration pump is tripped or broken – Reset the pump. If it’s still not operating properly, have it repaired or replaced by an authorized technician.
