Certain circumstances require commercial kitchen to close down temporarily. To prevent energy consumption, mold or damage, Vulcan fryers have specific shut-off or restart procedures to follow when they’ve been idle for an extended period of time. Below are instructions from our friends at Vulcan for shutting down and starting up its fryers.

Vulcan Fryer Shutdown Procedures

The following are shutdown instructions by model:

LG, VEG & GR Gas Fryers

  • Step 1. Turn the thermostat off by turning the knob to the OFF position.
  • Step 2. Drain the fryer completely following the directions in the operator’s manual or the guide at the bottom of the page.
  • Step 3. Clean the fryer following instructions in the operator’s manual or the guide at the bottom of the page.
  • Step 4. Turn the pilot off by pushing pilot knob and turning it to OFF.
  • Step 5. Turn the main gas shutoff valve off.

Powerfry Gas Fryers

  • Step 1. Drain the fryer completely following the directions in the operator’s manual or the guide at the bottom of the page.
  • Step 2. Clean the fryer following instructions in the operator’s manual or the guide at the bottom of the page.
  • Step 3. Push the power switch to OFF.
  • Step 4. Turn the main gas shutoff valve off.

ER Electric Fryers

  • Step 1. Open the fryer door.
  • Step 2.Push the power switch to OFF.
  • Step 3. Drain the fryer completely following the directions in the operator’s manual or the guide at the bottom of the page.
  • Step 4. Clean the fryer following instructions in the operator’s manual or the guide at the bottom of the page.
  • Step 5. Turn the electric circuit breaker to fryer off.

Vulcan Fryer Start-Up Procedures

Vulcan’s restart instructions are universal across all models.

  • Step 1.  If your kitchen has been idle for 30 days, set up an appointment with a qualified gas service technician to be onsite during the start-up process. Make sure you also check all gas equipment in kitchen for gas leaks.
  • Step 2. Perform a boil-out procedure following the instructions the operator’s manual for your specific model.
  • Step 3. Perform a “before-first-use” cleaning of the unit following the directions in the operator’s manual for your specific model.
  • Step 4. Fill the fry tank with oil and start up the unit following the procedures in the operator’s manual for you specific model.
