Flexeserve Hot Holding Cabinets Cleaning & Maintenance

Flexeserve’s unique and patented range of heated units are revolutionizing all sectors of the hot food market. To help standardize the maintenance and cleaning procedures for your Flexeserve models, we have put together a daily guideline of what you can do to make sure your units are working cleanly and efficiently for the long run.

This guide is applicable to Flexeserve Rear Feed North America, Zone 2-5 North America and Hub North America.

What You’ll Need

Make sure you have the following products on hand before starting your cleaning.

  • Soft cloths for cleaning
  • Mild cleaning detergent
  • Water
  • Vacuum (needed only for Flexeserve Hub units)

Preparing to Clean

Carefully ensure the following are in order before beginning any maintenance on your unit.

  • Step 1. Isolate the unit – Confirm that the unit you are working on is not connected to any other units.
  • Step 2. Check the temperature of the unit – Is the cabinet still warm? If so, allow time for the unit to completely cool. All interior and exterior surfaces must be room temperature before cleaning begins.
  • Step 3. Prepare the unit for cleaning – Ensure that the unit has been turned off and that the power cord is unplugged.
  • Step 3. Wipe and dry the shelf – Take a damp cloth and soak it in mild detergent. Use this to clean the surface of the shelf.  Once finished, sanitize and dry.

Note: Be careful not to use too much water and be sure that water is not pooling or sitting on the glass surface. If needed, wring out the cleaning towel after soaking.

Note: Do not continue if you notice any cracks or damage in the surface glass.

What to Avoid When Cleaning

  • High-pressure cleaners, jets, or steam units – Excessive water can damage the unit.  
  • Abrasive cleaning products – They might damage the finish of the equipment. Use only non-abrasive products.
  • Glass cleaning products – Only use water and mild detergent.

Rear Feed & Zone 2-5 Instructions

Below are the daily cleaning procedures for the Flexeserve Rear Feed, Zone 2, 3, 4 and 5 Tiers.

  • Step 1. Remove the risers – Lift up the risers and ticket strips.
  • Step 2. Clear the debris – Sweep crumbs or food debris out of each zone.
  • Step 3. Clean all surfaces – Use a non-abrasive cleaner to clean the glass shelves, inner side walls, lamp diffuser glass, and any remaining exterior surfaces.
  • Step 4. Replace the risers – Place the risers and ticket strips back into place before resuming use of the unit.

Flexeserve Hub Instructions

Here are the daily cleaning procedures for the Flexeserve Hub shelves, base tray and door seals.

Wire Shelves

  • Step 1. Remove the shelves – Unhook each shelf from its bracket. See figure below.
  • Step 2. Wipe down the shelves – Clean the shelves with a damp cloth and mild detergent. Ensure that the detergent is safe for stainless steel.
  • Step 3. Remove debris – Once the shelves are removed, any food debris or crumbs can be cleaned out.
    • Note: At any point of the process, try not to sweep crumbs into the air outlet, located at the front of the unit. 
  • Step 4. Reassemble the shelves – To replace the shelves, simply reverse the hooking process.

Base Tray & Crumb Catcher

  • Step 1. Prepare to clean – Double check that the unit is empty before cleaning the base tray.  
  • Step 2. Remove and clean the base tray – Use the handle of the tray to lift it. Clean the surface using mild detergent and a soft cloth.
  • Step 3. Remove the crumb catcher – To remove, use the two finger holes on either side of the crumb catcher.
  • Step 4. Empty the crumbs – Dispose of the crumbs. Clean the surface using mild dish detergent and a soft cloth.
  • Step 5. Vacuum the tray – Use a vacuum to remove left over debris.
  • Step 6. Clean the base fan – As with the other surfaces, wipe over the fan using mild detergent and a soft cloth.
    • Note: Avoid allowing any debris to enter the fan.
  • Step 7. Clean the back panel – Wipe down the back of the unit.
  • Step 8. Reassemble the base tray – Place the base tray and crumb catcher back into their places to complete the cleaning process.

Door Seals

  • Step 1. Remove the door seals – Carefully pull the door seal outwards from the corner, shown below.
  • Step 2. Clean the gasket – Use warm soapy water and a soft cloth to clean the gasket. Once complete, dry it with another soft cloth or paper towel.
  • Step 3. Re-fit the door seal – To begin, push both door seal top corners into the groove of the door.
  • Step 4. Press the door seal in – Use a door seal fitting tool to work the seal into the door completely.
  • Step 5. Review the fit – Once the seal is fully pressed into the door, make sure that it is flat around all borders.
