How to Clean a Globe Slicer

Whether it's a commercial kitchen, grocery store or deli, many foodservice establishments rely on Globe for high-quality prep equipment. Their selection of commercial slicers are some of the best in the business, slicing everything from cheeses to meats with ease. By following the instructions below for cleaning a Globe slicer, you can help keep your unit in the best shape for years to come.

Supplies You'll Need:

  • Mild detergent
  • Warm water
  • Sanitizer
  • Soft cloths
  • Nylon brush (if necessary)
  • Safety gloves

Do not use cleaners and sanitizers containing bleach, sodium hypochlorite or other caustic materials. Also, avoid placing the parts in the dishwasher and using a hose or pressure washer on the unit. Never use abrasive sponges, scrubbing pads and steel wool when cleaning.

Cleaning Instructions for S-Series Globe Slicers

Below are cleaning instructions for s series models. The SG13 & SG13A slicers need to be cleaned every 4 hours, and they will automatically shut down if not cleaned.

Step 1. Prepare the Slicer

Push the STOP button to turn off the knife motor and turn the slice thickness dial clockwise past “0” until it stops. After, unplug the power cord from the wall outlet. The white power indicator light will go out. 

Step 2. Disassemble the Carriage

Start by pulling the carriage towards you and loosen the carriage release knob. Use the carriage handle to tilt the carriage and arm to the right so it’s in the cleaning position. Hold the carriage’s end weight and unscrew the slide rod, then pull the rod out of the end weight. 

Step 3. Clean the Carriage

Using a cloth, warm water and a mild detergent, wipe down the carriage. Gently rinse and sanitize the carriage using separate cloths. Allow the carriage to air dry afterwards. 

Step 4. Remove the Knife Cover

Make sure to wear safety gloves during this procedure. To remove the knife cover, push down on the release lever, hold the lever and pull the cover forward. Remove the knife sharpener by pulling it up and away. Be cautious of the sharp knife blade while removing the sharpener. 

Step 5. Clean & Sanitize Disassembled Parts

Using 3 separate sinks, prepare a sink for cleaning, rinsing and sanitizing. Clean the end weight, slide rod, knife cover and knife sharpener with a mild detergent and warm water, then rinse. Sanitize the removable parts in a sanitizing solution for at least 2 minutes, then let them air dry.

Step 6. Clean & Sanitize Knife Assembly

With a cloth damped in warm water and a mild detergent, carefully insert it between the knife and knife ring guard. Work the cloth along the entire inside surface of the ring guard to clean it. Spray a sanitizing solution onto a clean cloth and wipe down the knife guard surfaces. Sanitize both sides of the knife, gauge plate and the entire slicer, then allow them to air dry. 

Step 7. Clean & Sanitize Gauge Plate

Pulling the knife towards you, wipe down the closed gauge plate with warm water and a mild detergent. Sanitize the gauge plate and allow it to air dry. 

Step 8. Clean & Sanitize Various Surfaces

Clean and sanitize surfaces, and for other spots with stuck-on food, use a cloth to scrub. Clean and sanitize the catch area, handles and knobs. Don’t forget to clean under the slicer.

Step 9. Reassemble the Slicer

To reassemble the slicer, follow the reassembly procedure in the operation manual to make sure the parts are properly reinstalled on the slicer.

Cleaning Instructions for 3000, 4000, C and GC-Series Globe Slicers

Below are cleaning instructions for 3000, 4000, C and GC series models:

Step 1. Prepare the Slicer

Start by shutting off the slicer and turning the slice thickness dial clockwise past "0" until it stops. This allows the table to cover the knife edge. Then, unplug the power cord from the wall outlet.

Step 2. Remove the Food Chute

Loosen the food chute by releasing the knob that fastens the chute to the chute arm. Once the knob is released, carefully lift the chute off the chute arm. On C9/10/12 models, disassemble the chute by using the knob on the back of the chute to unfasten it into three separate pieces.

Step 3. Remove the Knife Cover

Make sure to wear safety gloves during this procedure. Lift the knife sharpener cover. While holding the knobs on the knife cover, pull up on the top spring-loaded knob and lift upward to remove the cover. Once it's removed, the slicer won't be able to start.

On C9/10/12 models, remove the sharpener by loosening the screw on the sharpener's neck. Then, lift the sharpener off and away from the unit. Once the sharpener is off, remove the cover by rotating the release knob counterclockwise until the cover releases. Make sure to carefully hold the edge of the knife cover and lift upward to remove it. After the cover is off, remove the slicer deflector by loosening the screw knobs.

Step 4. Clean the Cover & Disassembled Parts

Clean the cover and disassembled parts in a sink with warm water. Apply mild detergent and scrub using a soft cloth. Use the detergent's instructions to dilute properly. For stuck-on residue, scrub using a nylon brush. Once the parts are dry, soak them in warm water and sanitizer for a couple of minutes. Follow the sanitizer's instructions for proper dilution. Allow the parts to dry again before reassembling.

Step 5. Clean the Knife Ring Guard

Do not remove or disassemble the knife ring guard. Soak a clean, soft cloth in mild detergent and warm water. Use the detergent's instructions to dilute properly. Ring the cloth out to remove excess water and carefully insert it between the knife and knife ring guard. With the cloth inserted, work it along the backside of the knife and repeat the procedure if necessary. If there is a lot of residue, scrub with a nylon brush in lieu of a cloth.

Step 6. Clean the Knife Blade

Rinse the soft cloth used to wash the ring guard. Add more detergent if necessary, and ring it out to remove excess water. Then, safely wash the top and bottom of the knife blade by wiping from the center outward. Rinse using a separate wet cloth, following the same wiping procedure. Make sure to prevent moisture from getting into the knife hub.

Step 7. Reassemble the Knife Cover

Align the knobs at the bottom of the knife ring guard with the notches at the bottom of the knife cover. You'll notice there is a hole at the top right of the cover that fits over the locator pin at the top of the knife ring guard.

Step 8. Clean the Slicer Table

Start by lowering the knife sharpener cover. Then, soak a clean cloth in a solution of mild detergent and warm water. Use the detergent's instructions to dilute properly. Once you ring out the rag, wipe off the slicer table. When wiping, make sure to start at the knife and pull towards you. Do not wipe towards the knife.

Step 9. Wipe Down the Slicer

Once all the parts are dry, use a clean cloth and sanitizer to wipe down the entire slicer. Follow the sanitizer's instructions for proper dilution and application.

Step 10. Reassemble Remaining Parts

Follow the reassembly procedure in the operation manual to make sure the parts are properly reinstalled on the slicer.
