How to Use a Jaccard Meat Tenderizer
Jaccard is known for its innovative food preparation equipment. Its meat tenderizers, used in both commercial and residential settings, make meat more tender and reduce cooking time by up to 40%.
Although using the units is fairly straightforward, it’s good to have a clear set of written instructions. With this guide on how to use a Jaccard meat tenderizer, you will be able to operate your unit easily and efficiently.
This guide is for the Jaccard Model H meat tenderizer and multiple handheld models such as the Meat Maximizer.
NOTE: Jaccard meat tenderizers are best used with boneless pieces of meat.
Jaccard Model H Meat Tenderizer Instructions
- Step 1. Ready the meat - Place the meat on the cutting board after trimming away any excess fat.
- Step 2. Position the board - Slide the board forward so that the front end of the meat is beneath the blades.
- Step 3. Begin tenderizing the meat - Pull down the handle so that the blades penetrate the meat. After the blades have penetrated the meat, release the handle: the blades will go back up into the machine on their own.
- Step 4. Continue tendering the meat - Move the board another 3” forward so that a different part of the meat is beneath the blades. Pull down the handle to sink the blades into the meat.
- Step 5. Repeat the process - Repeat Steps 3 and 4 until the entire piece of meat has been tenderized.
NOTE: In order to tenderize a piece of meat that is more than 3” thick, you will need to repeat this process on both sides.
Jaccard Handheld Meat Tenderizer Instructions
- Step 1. Prepare the meat - Lay the meat flat on a cutting board. Be sure to remove any excess fat or small bones.
- Step 2. Use the tenderizer - Place the tenderizer on top of the meat. Push down so that the needles penetrate the surface.
- Step 3. Tenderize the rest of the meat - Pick up the unit and place it on another section of the meat. Once again, press down so that the needles penetrate the meat. Continue tenderizing the meat as you move towards the other end.
- Step 4. Tenderize the other side - Once you finish tenderizing one side, flip the meat and repeat the tenderizing process on the other side.
