Middleby Marshall X55 & X70 Series Oven Cleaning & Preventative Maintenance
Middleby Marshall stackable gas ovens are versatile and dependable, allowing operators to prepare a variety of foods such as pizza and pastries. If you need help with maintaining your unit, this article outlines cleaning and preventative maintenance instructions for the X55 & X70 Series pizza ovens so you can keep your equipment working optimally.
Supplies List
- Stiff Nylon Brush
- Clean Cloths
- Small Vacuum Cleaner
- Shop Vacuum Cleaner
- Screwdriver
- Warm Water
- Mild Detergent
- Light Food Grade Lubricant (extended shaft and interior of the hollow shaft)
NOTE: Don’t use a water hose, high-pressured steam-cleaning equipment or large amounts of water as these may damage your oven. Also, avoid using caustic cleaners since these can damage the interior surfaces.
Pre-Servicing Checklist
- Step 1. Turn the oven off - In order to avoid injury, turn the oven off and let it cool down before servicing.
- Step 2. Cut the power - Disconnect the power cable and turn off the circuit breaker(s).
- Step 3. Disconnect the gas - Cut the gas supply to gas ovens before cleaning or servicing.
Daily Cleaning
- Step 1. Clean the filters - Take out and then clean the filters using warm water and a clean, soft cloth.
- Step 2. Clean the exterior - Wipe the exterior with a clean cloth and warm, soapy water.
- Step 3. Brush the conveyor belts - Stand at the end of the conveyor and allow it to run so you can brush off crumbs with a stiff nylon brush as the conveyor moves.
- Step 4. Clean the crumb trays - Using the illustration in the manual as a guide, remove and then clean the crumb trays.
- Step 5. Empty the drip pan - Remove and empty the drip pan.
- Step 6. Wipe the window - Clean the window with a soft cloth, warm water and a mild detergent.
- Step 7. Rinse the oven and components - Use a damp cloth to wipe down the oven, including the filters, crumbs trays and drip pan.
- Step 8. Dry the oven - Use a clean cloth to dry the oven and all the components.
- Step 9. Reinstall components - Return the filters, crumb trays and drip pan to the unit.
Monthly Preventative Maintenance
- Step 1. Remove the crumb trays, drive chain, conveyor, end plugs, air fingers and blank plate - Refer to the manual for detailed instructions. Remember to note the original location of the air fingers and blank plate so that you can reinstall them later.
- Step 2. Take out the drip pans - Remove, empty and clean the drip pans.
- Step 3. Disassemble the air fingers - As previously stated, it’s important to note the original location of each piece so you can reassemble the oven and its components correctly.
- Step 4. Clean the air fingers - Using a damp cloth and a vacuum cleaner, clean the air finger pieces.
- Step 5. Clean the interior - Wipe the oven cavity with warm, soapy water and a soft cloth. If necessary, use a small vacuum cleaner to vacuum up large food particles.
- Step 6. Rinse the oven interior - Use a damp cloth to remove any remaining soap suds or food particles from the oven cavity and the components.
- Step 7. Dry the interior - Use a clean, soft cloth to remove any remaining moisture.
- Step 8. Replace parts - Reinstall the crumb trays, drive chain, conveyor, end plugs, air fingers and blank plate in their original position. If needed, refer to the manual for instructions.
Quarterly Preventive Maintenance (Every 3 Months)
It’s strongly recommended that the quarterly preventative maintenance procedures only be performed by a Middleby Marshall Authorized Service Agent.
- Step 1. Clean the blower mounts - Vacuum both blower mounts and their surrounding compartments.
- Step 2. Tighten the electrical terminal screws - Use a screwdriver to tighten the electrical terminal screws.
- Step 3. Remove the split belt - Take out the conveyor end stop, crumb trays, chain cover, drive chains, end plugs and conveyor assembly. Then, remove the master links and roll up the belts, followed by the conveyor adjustment screws and the idler shaft assembly. If you need detailed instructions, refer to the manual.
- Step 4. Clean the idler shaft - Wipe the idler shaft with a soft cloth.
- Step 5. Replace the conveyor belt - Return all uninstalled components to the oven. If needed, use the instructions presented in the manual.
Bi-Annual Preventative Maintenance (Every 6 Months)
It’s strongly advised that the bi-annual preventative maintenance procedures only be performed by a Middleby Marshall Authorized Service Agent.
- Step 1. Follow the 3-month maintenance procedure - For the first part of the bi-annual servicing procedure, follow the quarterly maintenance instructions.
- Step 2. Service the burner nozzle and spark electrode assembly - For gas ovens, inspect and clean the burner nozzle and spark electrode assembly.
- Step 3. Check the conveyor bushings and spacers - Inspect the conveyor bushings and spacers. If they’re worn, replace them.
- Step 4. Inspect the blower belts - Check the condition of the blower belts. If they show excessive wear, replace them.
