Speed ovens combine elements of convection ovens, microwaves and grills, allowing you to cook food in half the time. Since time-saving equipment is extremely valuable, it’s important to maintain your unit properly to extend its life.

Speed Oven Cleaning

Be sure to turn the unit "OFF" and disconnect it from the power source before cleaning.

Supplies

  • Warm Water
  • Clean Cloths
  • Mild Detergent
  • Nylon Brush
  • Small Vacuum Cleaner (optional)
  • Manufacturer Approved Cleaner

Procedure

  • Step 1. Cool down the oven - Turn the oven “OFF,” open the door and vent the oven until the cavity is cool. Venting takes 30-90 minutes, depending on the model. Don’t attempt to clean the oven when it’s still hot.
  • Step 2. Clean the wire rack - Remove the wire rack and clean it with a damp cloth and mild, soapy water. Rinse and dry before returning the rack to the oven cavity.
  • Step 3. Remove large food particles from oven interior - If there are large food particles on the floor of the oven, use a damp cloth or small vacuum cleaner to remove them.
  • Step 4. Lift out the bottom heating element - Once fully cooled, lift out the bottom heating element. Remove any food particles.
  • Step 5. Clean the interior - Use a nylon brush to scrub the oven cavity. If your manufacturer recommends an approved oven cleaning chemical, put some of the approved cleaner on the nylon brush to help break up the food residue. 
  • Step 6. Wipe down the interior - Use a damp cloth to wipe the top, bottom and sides of the oven cavity to remove any remaining food particles and leftover cleaning solution.
  • Step 7. Clean the lower access panel - Take out the lower access panel and wash it with warm, soapy water. Scrub it with a nylon brush to remove food residues.
  • Step 8. Apply oven guard - If your manufacturer suggests using an oven guard chemical, apply the oven guard before reinstalling oven components.
  • Step 9. Reinstall oven components - Once the oven is thoroughly cleaned and dried, reinstall the lower access panel, bottom heating element and wire rack.
  • Step 10. Clean the oven exterior - Wipe down the oven exterior with a damp cloth. 

Cleaning Don’ts

  • Don’t use abrasive cleaners as they may scratch the surface. 
  • Don’t use abrasive cleaners or a cleaner / sanitizer containing chlorine, iodine, ammonia or bromine: these chemicals can corrode the stainless steel and glass.
  • Scrub with soft materials, such as cloths or nylon brushes / pads. Don’t use steel wool.

Preventative Maintenance

Remember to turn the oven “OFF” and unplug it from the outlet before doing any preventative maintenance work.

  • Small Vacuum Cleaner
  • Nylon Brush or Paint Brush

Procedure

  • Step 1. Remove the air filter - After cooling down and cleaning the oven, remove the air filter.
  • Step 2. Clean the cooling fans and louvers - Use a nylon brush or paint brush to remove dust and debris from the cooling fans and louvers.
  • Step 3. Dust the housing - Use a screwdriver to remove the rear vent housing cover, then use a clean, dry cloth to remove any debris from underneath the catalytic converter.
  • Step 4. Reattach the outer cover - Once the housing is clean, reinstall the rear vent housing cover.
  • Step 5. Clean the back panel - Wipe down the back panel with a clean, damp cloth.
  • Step 6. Reinstall the air filter - Return the air filter to the unit.
