AccuTemp Griddle & Steamer Shutdown Tips
Some situations call for a commercial kitchen to be closed temporarily. To ensure no damage while offline and smooth operation when restarted, AccuTemp griddles and steamers need to be shut off properly. Below are instructions from our friends at AccuTemp for shutting down the Accu-Steam Griddle and Evolution Steamer.
AccuTemp Accu-Steam Griddle Shutdown Tips
AccuTemp has a pretty straightforward process for shutting down the Accu-Steam Griddle. You must start by cleaning the entire griddle. Below is a quick recap and guide on cleaning the unit:
- Step 1. Start by scraping and squeegeeing the griddle surface.
- Step 2. Add a splash of water to the surface before scrubbing it with a long-handled pad holder.
- Step 3. Pour more water or ice on the griddle. Then, squeegee the moisture off the surface.
Once all the food remnants and debris are off, unplug the griddle and turn off the gas.

AccuTemp Evolution Steamer Shutdown Tips
AccuTemp uses a similar shutdown plan for the Evolution Steamer. Start by cleaning the unit, following the quick procedures or guide below:
- Step 1. Drain water from the unit.
- Step 2. Add clean water and a cup of white vinegar to the cooking compartment.
- Step 3. Start "Cook Mode" for 15 minutes. The compartment will fill with water if the unit has an automatic fill option. If doesn't have this option, manually add about 2.5 gallons of water to the fill line, which is next to the water sensors. Once water is added, shut the door.
- Step 4. After 15 minutes, turn off the unit. Let the cooking compartment cool down completely (140 degrees or less). Then, drain out the mixture of water and vinegar.
- Step 5. When the cavity is cool, remove pan racks and the steam collector plate. Then, remove the steam distributor panel by unscrewing the four nuts on the interior right wall and lifting off.
- Step 6. Wash all the removed pieces in step 5 in by hand in the sink or running them in a dishwasher.
- Step 7. Scrub the interior, starting with the two water sensors in the left side of the interior cavity. Then, scrub the all three interior walls, door and bottom of the cooking chamber with a non-metallic scratch pad. If the unit is connected, remove the float ball from the stem and scrub down the stem. Place it back on the stem when cleaned.
- Step 8. Rinse the interior with clean water and drain it when filled.
- Step 9. Reinstall the components removed in step 5. Start with the steam collector plate. Then, reinstall the steam distributor panel and pan racks, respectively.
- Step 10. Wipe down the interior of the steamer with a clean cloth. Make sure you also wipe down the the back flap of the door gasket, cavity and inside of the door. Leave the door open overnight to let everything dry completely. This helps increase the gasket's lifespan.
After cleaning is complete, unplug the steamer and turn off the gas.
