The Alto Shaam convection oven is a valuable asset in any commercial kitchen. With the ability to roast and bake, it’s usefulness shouldn’t go unnoticed. That’s why it’s so important to know how to get it back up and running should something be amiss. If you’ve run into a problem with your Alto Shaam convection oven, take a look at our troubleshooting guide to assess the issue and get a fix in place quickly.

This guide will cover the Alto Shaam ASC-2E, ASC-4E and ASC-4G Manual and Electronic Control models.

ASC-2E, ASC-4E and ASC-4G Manual Control

Should any of the following problems arise, you can follow the suggested remedies to try to alleviate these issues. Should these problems continue, contact a certified service technician. Also, be sure you consult your model’s manual to ensure you don’t void any warranties.

No Power to the Oven

Possible Causes:

  • Insufficient power supply
  • Defective power cord or plug
  • Defective power switch
  • Loose electrical connection

Remedy:

  • Check the power source
  • Check and replace the power cord or plug if necessary
  • Check and replace the power switch if necessary
  • Check all electrical connections

Cooking Temperature is Too High/Too Low

Possible Causes:

  • Thermostat is out of calibration
  • Defective thermostat

Remedy:

  • Check the calibration by using a digital thermometer in the center of the cavity. Calibrate if necessary.
  • Replace the thermostat

Cooking Temperature is Too Low

Possible Causes:

  • Defective door gasket
  • Door isn’t closing properly

Remedy:

Fan Isn’t Running

Possible Causes:

  • Door switch is defective or out of adjustment
  • Door switch has tripped (2E model only)
  • Door isn’t closing properly
  • Internal high limit tripped

Remedy:

  • Adjust or replace door switch
  • Reset by pushing the black button in
  • Check the top and bottom door latches

Fan is Running but There’s No Heat

Possible Causes:

  • High limit tripped
  • Defective element (2E and 4E models only)
  • Gas isn’t connected or turned on (4G model only)
  • Centrifugal switch is faulty

Remedy:

  • Reset high limit and test temperatures
  • Replace the element
  • Check gas connections and make sure it’s turned on

Fan Runs While the Door is Open

Possible Causes:

  • Door switch is defective or out of adjustment

Remedy:

  • Adjust or replace door switch

ASC-2E, ASC-4E and ASC-4G Electronic Control Error Codes

These error codes will display based on various issues. Take a look to see what your code means and how to fix the issue. If you’re unsure, cycle the power to the control, and contact a certified service technician.

  • E-10: Cavity Air Sensor Shorted
    • Possible Cause: Cavity Air Sensor reads less than 5° F. Check the sensor.
  • E-11: Cavity Air Sensor is Open
    • Possible Cause: Cavity Air Sensor reads less than 5° F. Check the sensor.
  • E-20: Product Probe has Shorted
    • Oven will cook in time only
    • Possible Cause: Product probe reads less than 5° F. Check the sensor.
  • E-21: Product Probe is Open
    • Oven will cook in time only
    • Possible Cause: Product probe reads less than 5° F. Check the sensor.
  • E-30: Under Temperature
    • Possible Cause: Unit is more than 25° F below set point for longer than 90 minutes.
  • E-31: Over Temperature
    • Possible Cause: Unit is more than 60° F above the maximum set-point for longer than 3 minutes. For holding cabinets with this error code, they are more than 145° F above the maximum set-point.
  • E-32: Safety Switch Open (Aux hi-limit switch)
    • Contact factory or service technician.
  • E-38: Internal Software Error
    • Contact factory or service technician.
  • E-39: Sensor Error
    • Contact factory or service technician.
  • E-50: Temperature Measurement Error
    • Contact factory or service technician.
  • E-51: Temperature Measurement Error
    • Contact factory or service technician.
  • E-60: Real Time Clock Error
    • Possible Cause: Data has been set to factory default. Make sure that the date and time are correct, if applicable.
  • E-61: Real Time Clock Error
    • Contact factory or service technician.
  • E-64: Clock isn’t Oscillating
    • Contact factory or service technician.
  • E-70: Configuration Connection Error (DIP switch):
    • Possible Cause: Refer to the wiring diagram in your user’s manual for your particular model to ensure the DIP switches on the control match the settings on the WD. If the DIP switch setting are correct, replace the control.
  • E-78: Voltage Low
    • Possible Cause: Voltage is below 90 VAC on a 125 VAC unit, or below 190 VAC on a 208-240 VAC unit. Correct the voltage.
  • E-79: Voltage High
    • Possible Cause: Voltage is over 135 VAC on a 125 VAC unit, or over 250 VAC on a 2018-240 VAC unit. Correct the voltage.
  • E-80: EEPROM Error
    • Possible Cause: Ensure that all temperatures and timers are properly set. Contact factory if problem persists.
  • E-81: EEPROM Error
    • Contact factory or service technician.
  • E-82: EEPROM Error
    • Contact factory or service technician.
  • E-83: EEPROM Error
    • Contact factory or service technician.
  • E-85: EEPROM Error
    • Possible Cause: All timers that were previously on are now off. Sign of a possibly bad EEPROM.
  • E-86: EEPROM Error
    • Possible Cause: Stored HACCP memory is corrupted. Reset HACCP address to 1. It could also be a possible EEPROM, and you should contact factory or a service technician if the problem persists.
  • E-87: EEPROM Error
    • Possible Cause: Stored offsets are corrupted, and the offsets should be reset to 0. The control may also need recalibration, or could possibly be a bad EEPROM.
  • E-88: EEPROM Error
    • Possible Cause: All timer set-points are reset to 1 minute. All timers that were previously on are now off. Sign of a possibly bad EEPROM.
  • E-90: Button is stuck
    • Possible Cause: A button has been held down for longer than 60 seconds. Adjust the control, and the error will reset when the problem has been resolved.
  • E-91: Input failure
    • Contact factory or service technician.
  • E-d5: Datakey error
    • Possible Cause: The datakey digital signature is incompatible. Cycle the power, and install a compatible datakey if the error persists.
  • E-dT: Datakey error
    • Possible Cause: The datakey is incompatible with the control. Install a compatible datakey if the error persists.
  • E-dU: Datakey is unplugged
    •  Install the datakey and cycle power to clear the error.
  • dLto:
    • Cycle the power, and contact factory if the error persists.
  • dLSD: Micro SD card isn’t plugged in
    • Plug in the SD card and cycle power. Contact factory if error persists.
