Alto-Shaam rotisserie ovens deliver high-quality cooking results, earning them a central role in foodservice operations. To keep these high-performance units operating safely and efficiently, proper care is essential. If you're looking for guidance, these Alto-Shaam rotisserie oven cleaning instructions lay out the process clearly and concisely.

This information is for AR-6G gas units, as well as AR-7E and AR-7EVH electric models.

Supplies

Be sure to clean your machine at least once a day. If possible, wipe up spilled foods, especially acidic ones, as soon as possible. Avoid harsh chemicals like hydrochloric acid and abrasive materials like steel wool as these can not only damage the unit but also void the warranty. 

Pre-Cleaning Procedure

  • Step 1. Turn off the unit - Power down the machine by flipping the power switch to the “OFF” position. For gas models, be sure to turn off the burners as well.
  • Step 2. Unplug the machine - Cut power to the unit by pulling the power cord out of the electrical outlet.
  • Step 3. Allow the oven to cool down - Let the unit cool for 15-30 minutes before continuing. However, don’t allow it to cool completely—some residual heat helps loosen food residue.
  • Step 4. Put on gloves - Remember to wear protective gloves when touching unit surfaces or handling oven parts as they might be hot.

Cleaning the Cooking Chamber

  • Step 1. Remove detachable parts - Take out all removable parts, such as the rotating spits and grease trays. Refer to the user manual for a complete list of detachable parts.
  • Step 2. Wash detached parts - Clean the parts in a large sink with warm water, mild detergent and a soft sponge or cloth. Be sure to drain the grease collection tray before cleaning.
  • Step 3. Clean interior surfaces - Wipe the cooking chamber surfaces with soapy water and a soft cloth to remove any food residues. 
  • Step 4. Degrease the interior - Spray water-soluble degreaser onto stubborn residues, let sit for 10 minutes and then remove with a plastic scouring pad.
  • Step 5. Rinse the cooking chamber - Wipe away any remaining suds, residues or degreaser with a damp sponge.
  • Step 6. Wipe away any remaining moisture - Use a dry sponge or cloth to remove any excess moisture in the unit’s interior.
  • Step 7. Air dry the cooking chamber - Leave the door ajar so that the interior can dry completely, typically at least 30 minutes.

Maintaining the Exterior

  • Step 1. Wipe the control panel and door handles - Clean the control panel and door handles with soapy water and a sponge or cloth, then rinse and dry thoroughly. 
  • Step 2. Maintain the glass door - Spray commercial glass cleaner on the door, then wipe it off with a clean cloth.
  • Step 3. Clean the walls and top - Wipe down the top and exterior walls with warm water, mild detergent and a soft cloth, taking care to wipe with the stainless steel grain. Be sure to rinse away any remaining suds, residues or particles before drying.
  • Step 4. Wash the rotisserie gasket (AR-7E and AR-7EVH Only) - Remove the door gasket and clean it with warm, soapy water and a soft cloth or sponge. Rinse and dry thoroughly before reinstalling in the oven.

Cleaning & Reseasoning Cast Iron Tiles (AR-6G Only)

  • Step 1. Remove the cast iron tiles - Take the cast iron cooking tiles out of the unit.
  • Step 2. Brush the tiles - Use a wire brush to scrape off any debris or residues from the tiles. Minimize the risk of rust by avoiding soap and not immersing the plates in water.
  • Step 3. Reseason the tiles - Spray the cast iron plates with cooking spray to season them.

Degreasing the Convection Box (AR-7E and AR-7EVH Only)

  • Step 1. Remove the convection fan panel - Loosen the screws to take off the convection fan panel.
  • Step 2. Degrease the fan panel - Spray degreaser onto the back and front of the panel, allow it to sit for 10 minutes and then scrub off any deposits with a plastic scraper. Be sure to rinse the panel with warm water and then dry with a cloth.
  • Step 3. Clean the convection box interior - Use a damp sponge and plastic scraper to remove deposits around the convection element and fan blade.
  • Step 4. Reinstall the panel - Return the fan panel to the convection box and tighten the screws to secure it in place.

Resuming Normal Operation

  • Step 1. Reinstall detached parts - Return any uninstalled parts to the oven.
  • Step 2. Plug in the oven - Connect the unit to power by plugging the power cord into the electrical outlet.
  • Step 3. Turn on the unit - Power on the oven by turning the power switch to the “ON” position. Be sure to turn on the burners for gas-powered units as well.
  • Step 4. Run a cooking cycle - Set a short cooking cycle with no product to help remove any lingering moisture or odors before returning the unit to service.
  • Step 5. Use the unit normally - You may resume normal operation of the machine.
