Alto Shaam Rotisserie Oven Operating Instructions

A sizzling, freshly-cooked rotisserie chicken is superior for flavor and easy cooking. Just make sure you know how to handle your oven. Follow along below for Alto-Shaam rotisserie oven operating instructions that’ll help you from startup to finished product in no time. We have instructions for various models like the AR-6G, AR-7E and AR-7EVH. 

AR-6G Gas Oven

  • Step 1 - Rotate the desired gas valve knob to the ignite position (H=High).
  • Step 2 - If the burner doesn’t ignite after 5 seconds, turn the valve to the OFF position. Open the doors to allow the gas to dissipate and repeat the ignition process.
  • Step 3 - Once the burner has ignited, rotate the gas valve to the desired flame height.
  • Step 4 - Insert the food products onto the spit, spacing them evenly along the length.
  • Step 5 - After preheating, properly insert the “T” shaped, spit drive hub onto the spit drive shaft. Turn the spit slightly to ensure it’s correctly positioned. Place the opposite end of the spit on the spit retaining bracket. 
  • Step 6 - Once all spits are loaded and inserted, close the oven door. Select and activate the geared motors with the spit rotation switches for each spit.
  • Step 7 - Allow the food product to cook fully according to food safety standards, then remove the spits and food product.
  • Step 8 - Turn the oven off by rotating the gas valve knob to the OFF position.

AR-7E & AR-7EVH Electric Oven

Cooking

  • Step 1 - Press the On/Off key to turn the unit on. 
    • The On/Off and Hold indicator lights will light up. The display will show the last set holding temperature and the oven will preheat to this temp. 
  • Step 2 - Press the Cook key. If you need 2-step cooking, press the COOK key again. 
    • The Cook and the Time underscore lights will alternately illuminate. The display will indicate the last set cooking temperature when the Cook underscore light is illuminated. The display will also indicate the last set cooking time when the Time underscore light is illuminated. 
  • Step 3 - To change the displayed temperature, press the up and down arrow key when Cook Temperature 1 or Cook Temperature 2 is illuminated.
  • Step 4 - Press the Time key. If you need 2-step cooking, press the Time key again. 
    • The Time underscore light will light up. The display will show the last set cooking time when the Time underscore light is illuminated. The display will also indicate the last set cooking temperature when the Cook underscore light is illuminated. 
  • Step 5 - To change the displayed time, press the up and down arrow key when Time 1 or Time 2 is illuminated.
  • Step 6 - Press the Hold key. 
    • The Hold underscore light will light up. The display will indicate the last set holding temperature.
  • Step 7 - To change the holding temperature, press the up and down arrow key when the Hold underscore light is illuminated.

Hold Only

  • Step 1 - Press the On/Off key to turn the unit on. The On/Off and Hold indicator lights should light up. The display will show the last set holding temperature and the oven will preheat to this temp. 
  • Step 2 - Press the Hold key. The Hold underscore light will illuminate and the display will show the last set holding temperature.
  • Step 3 - To change the holding temperature, press the up and down arrow key when the Hold underscore light is illuminated.
  • Step 4 - Press the Start key and the rotisserie will begin to rotate and hold at the set temperature.
