American Range Fryer Surging

If your unit is surging steam and oil, here are a few American Range fryer troubleshooting tricks you can try:

  • Step 1. Turn off fryer – Anytime you’re working on your fryer, either to troubleshoot, clean or perform maintenance, you’ll want to turn it off to ensure worker safety.
  • Step 2. Replace the filter – As a filter becomes dirty, it’s not able to trap food particles and other impurities as well, which can lead to surging.
  • Step 3. Drain the water – With a low point drain valve, drain the water from the supply line.
  • Step 4. Try again – Now that the filter is replaced and the water is drained, you should be able to work the fryer without the bubbling. As always, if your DIY troubleshooting doesn’t work, call an authorized service technician to help you solve the problem.

How to Light American Range Fryer

Sometimes half the battle with American Range fryer troubleshooting is getting the darn thing to turn on. The section below takes you through a 10-step guide on how to light an American Range fryer:

1. Fill the Oil Vat to the “Level” Line

First things first, you can’t light a fryer without anything to heat. Fill the oil to the “Level” line and try not to overfill the vat.

2. Open the Fryer Door

To access the thermostat and knobs, you’ll need to open the fryer’s door.

3. Turn the Manual Gas Shut-Off Valve, Gas Control Knob and Thermostat Off

If you’ve read ahead, you might be wondering: Why do I have to turn them off right before turning them on again? Ensuring these components are good and off for at least 5 minutes before lighting the pilot is an essential safety measure that prevents uncontrolled ignition and explosions.

4. Turn the Manual Gas Shut-Off Valve On and the Gas Control Knob to PILOT

After waiting 5 minutes, you can go ahead and turn the manual gas shut-off valve on and rotate the combination gas control knob to the PILOT setting. This ensures you have control over how much gas is being supplied to the burner upon lighting.

5. Light the Pilot

Now comes the moment we’ve all been waiting for. With a match or lighter, ignite the pilot while simultaneously holding down the gas control knob. You might have to repeat the process until you can get the pilot light to stay lit after releasing the gas control knob.

  • Note: If your American Range fryer pilot light won’t stay lit, move to the section above.

6. Turn the Combination Gas Control Knob On

Now that the pilot is lit and holding steady, you can turn the combination gas control knob to the on position. Waiting to turn on the combination gas control knob ensures that no gas has accumulated around the burner, so it doesn’t cause an explosion or fire when the pilot is lit.

7. Select the Desired Temperature on the Thermostat and Turn the Burners On

Each menu item has a temperature range and cook time that produces the best results. Select the temperature as per recommended cooking instructions and turn on the burners.

8. Close the Door

It would be hard to use the fryer with the door open, anyway, but closing it protects the internal controls from the deteriorating effects of hot oil.

9. Start Frying

Now to the good part! Fry up chicken nuggets, French fries, tater tots, onion rings, toasted ravioli and other fried goodies to your heart’s content!

10. Turn Off the Unit by Repeating Step 3

When all the chicken nuggets and French fries have been made for the day, it’s time to remove the oil. But first, you need to let the oil cool down by shutting down the American Range fryer. To do this, repeat step 3, turning off the manual gas shut-off valve, gas control knob and thermostat.
