APW Wyott Countertop Fryer Cleaning Instructions

APW Wyott’s line of countertop fryers are perfect for many commercial foodservice settings. From small restaurants and bars to concession stands and more, these fryers can help you make delicious french fries and onion rings for your customers. To help ensure that your food products consistently come out tasty and crispy, you must keep your countertop fryer properly cleaned. Learn how to thoroughly clean your APW Wyott countertop fryer unit with our handy guide.
This cleaning guide is applicable for models APWF-15C, APWF-25C, EF-15N, EF-30NT, EF-30NTC, HEF-15S and HEF-30T.
APWF-15C and APWF-25C Cleaning
Daily Cleaning
- Step 1—Remove all loose parts and wash thoroughly. These parts include the basket hanger, baskets and crumb screen.
- Step 2—Wipe down the exterior and interior surfaces and parts with a soft cloth.
- Step 3—At the end of the day, filter the liquid oil or shortening. Replace the oil if necessary. If you use the fryer heavily, filter the oil more often throughout the day as needed.
Weekly Cleaning
- Step 1—Shut down the unit by turning off the gas cock dial and the power supply, if applicable.
- Step 2—Drain the fryer in a filter pan or steel container, then flush out the sediments from the bottom with liquid oil.
- Step 3—Close the drain valve and fill the unit with a mixture of water and boil-out solution.
- Step 4—Relight the pilot and turn on the burners.
- Step 5—Let the solution come to a boil, then turn off the thermostat and let the solution sit and soak into any food deposits or carbon spots. Allow to soak for 1 hour.
- Step 6—Drain out the solution and then scrub the insides with a cleaning brush. Rinse thoroughly when done.
- Step 7—If tough spots or debris still remain, repeat cleaning steps.
- Step 8—Once the unit is fully clean, wipe it dry with a soft cleaning cloth and refill with fresh oil or shortening.
EF-15N, EF-30NT, EF-30NTC, HEF-15S and HEF-30T Cleaning
This cleaning procedure should be done at least once a week or more frequently depending on your amount of usage.
- Step 1—Turn off the thermostat and let the unit cool down.
- Step 2—Lift the elements to the drain position and clean off any debris with a wire brush.
- Step 3—With elements raised, lift out the fry tank and strain the frying compound into a clean container.
- Step 4—Place the empty fry tank back into the unit and lower the elements.
- Step 5—Add water to the fry tank until it reaches the “MAX” mark.
- Step 6—Add an OEM-appropriate cleaner and follow all directions.
- Step 7—Turn the thermostat up to 250° F / 121° C and let the cleaning solution come to a boil.
- Step 8—Let the cleaning solution boil for about 30 minutes.
- Step 9—Turn off the unit and lift out the elements to the drain position.
- Step 10—If needed, use a fiber or plastic brush to clean the thermostat bulbs and a mild soap solution.
- Step 11—Rinse with clean water.
- Step 12—Lift out the fry tank and drain. Repeat Steps 10-11 on the fry tank.
- Step 13—Take 2 cups of vinegar and rinse the inside of the tank.
- Step 14—Thoroughly rinse the fry tank until the vinegar smell is gone. Be sure any and all cleaning products and residue are rinsed off, otherwise the frying compound will be ruined.
- Step 15—Dry the tank thoroughly and reinstall the tank and lower elements.
- Step 16—Shut off the unit and cover the tank until it’s time to use it again.
- Step 17—Polish the stainless steel surface with a damp cloth regularly. Remove any discolorations with a non-abrasive cleaner.
