Cleaning and preventative maintenance are important tasks to complete on your Baxter rack oven. Since your oven sees a lot of use on the daily, it can accumulate significant build-up. To ensure that it works safely and efficiently during each shift, it’s vital to complete regular cleaning tasks to help minimize damage. We’ve compiled a comprehensive to-do list of cleaning and preventative maintenance tasks for your Baxter rack oven so you can continue to use it reliably.

This guide is applicable for the OV500 model series like OV500E1, OV500E2 and OV500G2, and the OV310G and OV310E mini rotating rack oven models.

Cleaning Instructions

  • Step 1—Turn off the unit and disconnect power.
  • Step 2—Let the oven cool completely.
  • Step 3—Clean the outside of the unit with a clean, damp cloth.
  • Step 4—Remove the racks  and take them to a dishwashing sink. Wash the racks with warm, soapy water and a cleaning brush. Rinse the racks with water, then dry thoroughly with a clean cloth.
  • Step 5—Wash the stainless steel interior of the oven with a clean cloth and warm, soapy water. Be careful when cleaning around interior components like sensors, probes and the rotating mechanism. Rinse with water, then dry with a clean cloth.
  • Step 6—Use a glass cleaner to remove any residue from the door glass. For heavy buildup, use a scraper to remove it.
  • Step 7—If equipped, clean the hood filters with soap and warm water.

Preventative Maintenance 

Daily

  • Clean the oven exterior

Weekly

  • Clean the oven interior and remove any loose debris
  • Clean door glass
  • If equipped, empty out the grease catcher

Monthly

  • If equipped, clean the exhaust hood filters

Bi-Monthly

Depending on the model of rack oven you have, you may have a specific list of bi-monthly tasks to complete. Refer to your operator’s manual for a full rundown of these tasks.
