CombiWash Automatic Cleaning Cycle

The BLCT and BCT combi ovens have an automatic cleaning feature that you can run depending on daily usage needs. Prior to beginning an automatic cleaning cycle, make sure that:

  • You’re using an OEM-recommended detergent and rinse aid.
  • The red tube is designated for detergent, and the blue tube is designated for rinse aid.
  • The combi oven has cooled down below 80°C. If needed, use the CoolDown function on your combi oven to achieve the ideal oven temperature.

Once these initial steps are completed, you can run the automatic cleaning cycle by following these steps:

  • Step 1. Press the MANUAL key on the Main Menu.
  • Step 2. Press COMBI WASH.
  • Step 3. Select your desired cleaning mode. Your Blodgett combi oven will offer five different cleaning options:
    • Flush: a pre-wash cleaning cycle. Select this before other cleaning cycles.
    • Light: Recommended after roasting and steaming at low temperatures.
    • Medium: Recommended after roasting and steaming at medium temperatures.
    • Heavy: Recommended after roasting at temperatures exceeding 180°C.
    • Intensive: Recommended after roasting greasy food items.
  • Step 4. Once you have selected the appropriate cleaning cycle, press START, and CombiWash will begin.

Weekly Cleaning Routine

While daily cleaning will ensure that your Blodgett combi oven runs smoothly, there are some weekly cleaning measures that must also be performed on certain components. Make sure you clean the air intakes, the control filter and behind the fan guard on a weekly basis, as they are important parts of your combi oven.

Note: These processes aren’t applicable on the mini combi oven models.

You will find the control filter below the control compartment and in front of the spray hose.

How to Clean the Control Filter

  • Step 1. Remove the control filter by pulling down the black knob located on the left side of the filter.
  • Step 2. Clean the filter with soap and water.
  • Step 3. Once clean and dried, you can reinstall the filter. To do so, press upwards on the filter so that the back of the knob lines up to the hole in the bottom of the oven.
  • Step 4. Secure the the filter into place, push the center of the knob upwards. The back of the knob will expand and lock the filter in place.

How to Clean Behind the Fan Guard

  • Step 1. Loosen the two screws on the fan guard (A.K.A. the baffle).
  • Step 2. Open the baffle forward.
  • Step 3. Using an OEM-recommended cleaner, spray down the fan and heat source, then place the oven on steam mode for approximately 10 minutes.
  • Step 4. Once the steam cycle is complete, you can rinse off the cleaner and close the fan guard. Secure back into place with the two screws you previously removed.
