Cadco Convection Oven Instructions
Cadco ovens provide everything you could need in a compact size, making these units perfect for smaller format commercial kitchens. They are also easy to operate so anyone on your staff can be trained to use them. Learn how to operate your Cadco convection oven with these simple instructions.
This how-to guide is applicable for Cadco convection oven Lisa Series models OV-003, OV-013, OV-023, XAF-113, XAF-133, XAF-183 and XAF-193.
OV-003, OV-013, OV-023 Instructions
Preheating
Before placing any food products into the oven, it must be preheated. Turn the temperature dial clockwise to your set temperature. The green pilot light will illuminate to indicate that the oven is preheating.
Please note that the green pilot light will periodically turn off and on throughout the cooking cycle. This indicates that the oven’s heating element is turning off and on to keep the internal temperature within 5-10 degrees of your setpoint.
Setting Cooking Time
- Step 1—Set your desired cooking time by turning the dial to a number between 0-60. The timer will tick down until the dial reaches 0 at the end.
- Step 2—To keep your oven running continuously, turn the time dial counterclockwise to the hand icon. The oven will stay on until you turn the time dial back to 0 manually.
Loading Food into Oven
Your Cadco oven can prepare a whole host of food products, including meat, fish and bread—both fresh and frozen. When using your oven to prepare food, keep these tips in mind:
- Place trays 2” apart from one another to allow for proper air circulation.
- Avoid salting food while it’s within the oven as over time the salt can damage your unit.
XAF Series Instructions

Setting the Humidity
Press the silver humidity button for 5-10 seconds intermittently to add moisture into the oven while cooking. Be sure to not use excessive humidity while cooking, especially at temperatures above 300° F/149° C.
