Carter-Hoffmann Holding Cabinet Cleaning & Maintenance
Carter-Hoffmann’s holding cabinets are perfect for keeping all kinds of food at a safe and warm temperature. No, needless to say, ensuring they’re regularly cleaned and maintained is important for their overall function and efficiency. Below are the periodic maintenance and cleaning procedures for the DF Series and Logix Series of holding cabinets by Carter-Hoffmann so you can make sure your units are running smoothly.
Periodic Maintenance
Caster Maintenance
Caster bearings should be lubricated and inspected every six months. You can use a grease gun to easily lubricate them during this task.
Periodic Maintenance for Stacking Four & Five-Shelf Units
To safely complete these maintenance procedures, you’ll need two people.
- Step 1. Remove top screws -Remove the screws on the top unit (unit #1), then remove the cover and set all components aside.
- Step 2.Tip the unit and remove the casters - Place a moving blanket or a large piece of cardboard on the floor, then carefully tip the bottom unit (unit #2) onto its side on the cardboard or moving blanket. Remove the casters from the bottom of unit #2 and set aside.
- Step 3. Change position of units - Place unit #1 where unit #2 once was, and then carefully stack unit #2 on top of unit #1.
- Step 4. Reinstall top screws - Reinstall the screws into the top edge of unit #1 to secure it to unit #2.
- Step 5. Place top and casters in a safe location - Store extra top and casters in a safe spots in case they’re needed at a later date.
Periodic Cleaning
- Step 1. Take product out of the unit - Remove all food products from the cabinet, then turn off the unit and allow it to cool.
- Step 2. Power down the unit - Unplug the cabinet from the power source.
- Step 3. Remove product covers - Remove any product covers that may be on each shelf.
- Step 4. Wash product covers and cabinet - Using a chloride-free/phosphate-free soap or detergent, hand wash the product covers and cabinet, including the inside of the unit and all removed components.
- NOTE—Do not use abrasive cleaners, polishes, waxes, strong solvent or alcohol on the cabinet or its components.
- Step 5. Wipe down the cabinet interior and rinse the covers - Wipe down the cabinet interior and rinse the covers with a clean, damp cloth. Make sure you wipe off any excess water or residue from all surfaces and corners. Allow to dry.
- Step 6. Check and clean vents and filters - Check and clean all vents and filters, making sure no water leaks into these areas, into internal controls or any electrical areas.
- Step 7. Reinstall covers - Once they’re thoroughly dry, reinstall the food product covers.
Logix Series Daily Cleaning
Don’t use any strong detergents, alkalis, ammonia solutions or abrasive cleaners on the Logix Series holding cabinets.
- Step 1. Remove food product - Remove food product from the unit.
- Step 2. Power down unit - Turn the power switch to the OFF position and allow the unit to cool down completely. Unplug the unit before continuing.
- Step 3. Remove assemblies and parts - Remove the rack assemblies and empty the water reservoir. Lift up on the front of the heater module and pull it out of the cabinet.
- Step 4. Make sure power cord not hooked on cord hook - Slide the power cord through the access hole at the rear of the cabinet.
- Step 5. Clean vents and filters - Check the vents and filters, cleaning them with either a solution of baking soda and warm water or a mild detergent. Make sure no water gets into the internal controls or electrical areas.
- Step 6. Clean cabinet interior - Clean the cabinet interior with a solution of baking soda and warm water or a mild detergent. Clean any removed parts as well and reinstall once they are dry.
- Step 7. Empty condensate pan - Empty and clean the black condensate pan with a solution of baking soda and warm water or a mild detergent.
- Step 8. Clean doors and windows - Use a soft cloth and window cleaner to wipe down the doors and windows.
- Step 9. Wipe down control panel - With a clean, damp, nonabrasive cloth and chlorine-free detergent, clean the control panel. Make sure to rinse thoroughly with a clean damp cloth and let the panel dry.
