Duke Manufacturing Shutdown and Start-Up Instructions
Whether you need to temporarily shut down your equipment or restart it for service again, it's important to know how to do so properly. Following the OEM-recommended shutdown and start-up procedures for your Duke Manufacturing equipment ensures that they remain reliable, operate safely and continue to function correctly.

Duke Tri-Channel Cold Pan Instructions
Shutdown Procedures
- Step 1. Turn off the unit and allow it to warm up to room temperature.
- Step 2. Wipe down all compartments with a towel soaked in sanitizer.
- Step 3. Dry the channels with paper towels.
- Step 4. Clean the Day Cover door with a glass cleaner.
- Step 5. Leave open the Day Cover to help it dry further and prevent bacteria growth.
Start-Up Procedures
- Step 1. Wipe down all compartments with a towel soaked in sanitizer.
- Step 2. Clean the Day Cover door with a glass cleaner.
- Step 3. Close the Day Cover.
- Step 4. Turn on the unit.
- Step 5. Pre-chill the Cold Pan for 30 minutes before any product is loaded.

Duke Baking Center Oven Instructions
Shutdown Procedures
- Step 1. Empty and clean the Drip Pan with a clean, damp cloth.
- Step 2. Clean the stainless steel exterior by using either a stainless steel cleaner/polish or with hot, soapy water. Rinse well when done.
- Step 3. For TSC and TSCM models, clean the Optimist Nozzle.
- Step 4. Run a Dry Out cycle.
- Step 5. Leave the doors open.
- Step 6. Turn off the main water supply to the oven.
Start-Up Procedures
- Step 1. Turn on the main water supply to the oven.
- Step 2. Check to make sure all parts are installed properly.
- Step 3. Wipe down all compartments with a towel soaked in sanitizer.
- Step 4. Turn the control on.
- Step 5. Begin the Pre-Heat process.

Duke Refrigerated Counter Instructions
Shutdown Procedures
- Step 1. If the unit is left ON during shutdown:
- RBC Models: Clean the Air filter.
- RUF Models: Check, rotate or replace the air filter.
- Depending on the duration of the shutdown period, have recommended preventative maintenance performed.
- Step 2. If the unit is left OFF during shutdown:
- RBC Models: Clean the Air filter.
- RUF Models: Check, rotate or replace the air filter.
- Leave all doors open.
- Step 3. Wipe down all compartments with a towel soaked in sanitizer.
Start-Up Procedures
- Step 1. If the unit is left ON during shutdown:
- RBC Models: Clean the Air filter.
- RUF Models: Check, rotate or replace the air filter.
- Depending on the duration of the shutdown period, have recommended preventative maintenance performed.
- Step 2. If the unit is left OFF during stutdown:
- Turn on the power.
- Close the doors.
- Step 3. Wipe down all compartments with a towel soaked in sanitizer.
