Fagor Commercial Dishwasher Cleaning Instructions

The following guide is designed for Fagor Commercial undercounter & all purpose dishwasher models like the FI-48W, FI-64W and FI-72W.
Cleaning Instructions
Fagor advises that the dishwasher be drained daily and if in a high-use kitchen it should be drained after each meal rush.
- Step 1. Turn switch off - Switch the selector switch from 1 to 0 to turn the unit off.
- Step 2. Remove front right filter - Open the door and remove the front right stainless steel filter.
- Step 3. Remove overflow tube - Insert your finger into the top of the overflow tube to remove. Make sure you don’t remove the scrap basket.
- Step 4. Turn switch to drain - Close the door and turn the selector switch to drain.
- Step 5. Press start button - Press the start button to start the drain pump; it will illuminate. Wait 3 minutes until the start button turns off.
- Step 6. Remove scrap basket - Open the door and twist the scrap basket to the left to remove.
- Step 7. Clean scrap basket - Clean the scrap basket.
- Step 8. Reinstall parts - Reinsert the scrap basket and lock it into place by twisting to the right. Put the overflow tube back in and put the stainless steel filter back into position.
- Step 9. Turn switch to off - Turn the selector switch to the off position.
- Step 10. Wipe down and dry machine - Wipe the machine clean and dry it with a clean cloth. Leave the door open until the next use.
Deliming Instructions
Frequent deliming is an essential part of Fagor commercial dishwasher cleaning & maintenance.
- Step 1. Fill machine - Fill the machine and add the right ratio of deliming solution according to the solution’s instructions.
- Step 2. Remove detergent and tubes - Remove the detergent and rinsing tubes.
- Step 3. Run the machine - Run the machine for as many cycles as needed to delime the unit.
- Step 4. Turn off machine - Turn the machine off and open the door.
- Step 5. Run cycles again - Drain and refill the machine, then run it for 3-4 cycles to remove any deliming solution.
- Step 6. Drain machine - Drain the machine again.
