Hillphoenix refrigerated merchandisers offer the efficiency and versatility needed to meet a wide range of display needs in foodservice settings. Given the importance of proper care for essential equipment, follow these Hillphoenix self-service refrigerated merchandiser cleaning instructions to help keep your unit safe and sanitary.

This guide is for CF-S-SC, CF-SC/CF-SC (SFC) and CF-S multi-deck models.

Supplies

Clean the display case weekly and the condenser filter monthly. Be sure to move from top to bottom when cleaning the interior in order to avoid cross-contamination. Don’t use abrasive cleaners like steel wool and harsh chemicals like bleach as these can not only damage the unit but also contaminate the food.

Pre-Cleaning Procedure

  • Step 1. Turn off the case - Power down the unit by turning the power and light switches to the off position. If your installation includes a disconnect switch, use it to cut the power completely.
  • Step 2. Unplug the unit - Minimize the risk of electric shock by unplugging the power cord from the electrical outlet.
  • Step 3. Check the case drain - Make sure the waste outlet isn’t clogged; if there’s a blockage, clear it before continuing.
  • Step 4. Unload the merchandiser - Remove food items from the machine and either relocate them to another unit or discard them.
  • Step 5. Allow the machine to warm up - Let the case warm up for 10-15 minutes so that frost, ice and condensation will be easier to remove.

Cleaning the Unit

  • Step 1. Wipe the light fixtures - Clean the LED lights with a damp cloth, then dry them with a soft cloth.
  • Step 2. Wash the interior surfaces - Use warm water, mild detergent and a soft cloth to clean the shelves and walls within the unit. Remember to rinse and dry them thoroughly, too.
  • Step 3. Maintain the exterior surfaces - Clean the outside with warm, soapy water and a soft cloth, then rinse and dry completely.
  • Step 4. Clean underneath the case - Take off the toe kick and sweep away any dust, then use a mop and sanitizing solution to remove debris and eliminate pathogens.
  • Step 5. Maintain the condenser filter (monthly) - Slide out or pull off the condenser air intake filter, take it out of the case and then clean it by rinsing with water or using an air hose to blow off debris. Remember to dry the filter thoroughly before reinstalling it in the unit. Note that top-mounted compressors don’t have air intake filters.

Resuming Normal Operation

  • Step 1. Plug in the machine - Connect the unit to power by plugging the power cord into the electrical outlet.
  • Step 2. Power on the unit - Turn the power and light switches to the on position. If the machine has a disconnect switch, use it to restore power.
  • Step 3. Reset the temperature (if needed) - Check the temperature setting. If it was changed while cleaning, adjust it accordingly.
  • Step 4. Let the unit chill - Allow the machine to come to temperature for at least 30 minutes before restocking.
  • Step 5. Restock the merchandiser - Load the unit with food product.
  • Step 6. Use the unit normally - You may now resume normal operation of the machine.
