How Do I Clean a Vollrath Slicer?

Slicers are great to get those thick or thin cuts of deli meats and cheeses. However, switching from salami to provolone means you need to give it a thorough cleaning in-between. How do I clean a Vollrath slicer? Below we are going to help you answer that question and get your unit sanitized as well. 

The following guide is for the Vollrath heavy-duty electric slicers. 

Vollrath Slicer Preventative Maintenance

Disassembling the Slicer

  • Step 1 - Unplug the slicer from the outlet.
  • Step 2 - Turn the index control knob to the right, past zero (0), until it won’t turn any further. This protects you from the blade and is required for the carriage tray to be locked.
  • Step 3 - Turn the carriage release knob until it’s very loose. It isn’t removable. 
  • Step 4 - Firmly pull the carriage handle to bring the carriage tray forward until you hear it lock into place. Don’t try to force the carriage handle.
  • Step 5 - Lift up to remove the carriage tray. 
  • Step 6 - Loosen the bottom knob and unlatch the top knob to remove the blade cover.
  • Step 7 - Lift the blade sharpening assembly, rotate it 90° counterclockwise and lift to remove.
  • Step 8 - Remove the slicer guard. 
  • Step 9 - Use a clean cloth to remove large debris and liquid from the slicer. 

Cleaning the Slicer

It’s important to never soak the sharpening assembly and never clean equipment with abrasive cleaners. 

  • Step 1 - Wash the removable parts in a clean sink filled with warm water and a mild detergent. Rinse them with clean, warm water. 
  • Step 2 - Using a soft cloth, warm water and a mild detergent, wipe the front and back sides of the blade. Start at the center of the blade and wipe toward the edge.
  • Step 3 - Wipe the blade guard from the backside towards the inside edge. 
  • Step 4 - Clean the gauge plate, starting at the blade and wiping outward. Wipe the body of the slicer as well. 
  • Step 5 - Rinse the blade, guard, gauge plate and body with clean warm water.

Sanitizing the Slicer

  • Step 1 - Soak the removable parts in a sink with a solution of clean warm water and correctly-diluted sanitizer.
  • Step 2 - Remove the parts after soaking and allow them to air dry.
  • Step 3 - Dampen a soft cloth with diluted sanitizer, then sanitize the non-removable parts and the body of the slicer.
