How Do You Clean a Nemco Tomato Slicer?

The Nemco tomato slicer has revolutionized how commercial kitchens attack their food prep obligations. What used to take hours by hand can now be accomplished in minutes with the aid of a slicing machine. Since kitchen assembly lines have been tilted full throttle, it now means staff have a few extra minutes to clean the Nemco tomato slicer after each use.

  • Step 1. Remove the cartridge blade assembly – To remove the cartridge blade assembly, you’ll need to start by untightening the clamping knobs, so you can remove the blade assembly from the guide rods.
    • Note: If you’re using the Roma Tomato Slicer model, you’ll have to remove the ring pins from the blade holder to uninstall the cartridge blade assembly.
  • Step 2. Remove the pusher assembly – The next order of business is removing the pusher assembly, which you can do by taking off the thumb screws and slide stop. From there, pull out the pusher from the end of the slide board.
    • Note: If you’re using the Roma Tomato Slicer model, you’ll now have to remove the cradle assembly by lifting it from the back and sliding it forward.
  • Step 3. Wash components with a mild detergent – Once you’ve dismantled the Nemco tomato slicer, use a soft-bristled brush and a solution of mild detergent and hot water to wash all the components.
  • Step 4. Sanitize the tomato slicer – Use a manufacturer-approved sanitizer to disinfect the tomato slicer. These will include any food-safe sanitizer that’s approved for use on aluminum, stainless, and HDPE plastics.
  • Step 5. Rinse the unit in lukewarm water – After washing the slicer, you’ll want to soak it in lukewarm water. Hot water can cause the slide board to expand, making it hard to reassemble the unit.
  • Step 6. Reassemble the tomato slicer – Assemble the tomato slicer in reverse order you took it apart. That is, inserting the pusher into the slide board and reinstalling the slide stop, thumb screws and blades before retightening the clamping knobs.
