The Carter-Hoffmann Crisp N’ Hold offers restaurants, bars and other commercial kitchens a great way to keep their fried foods in a fresh, hot state before serving. To ensure that your food retains quality and keeps your Crisp N’ Hold operating efficiently and safely, it will need to have regular periodic cleanings. Below are step-by-step instructions for cleaning a Crisp N’ Hold unit, including CNH and VCHN models.

Carter Hoffmann Crisp N’ Hold Cleaning Instructions

  • Step 1. Power down the unit - Turn off and unplug the unit to get it powered down before cleaning.
    • Note. Wait for the unit to cool down before moving on to the next step.
  • Step 2. Remove the grease pan - Remove the grease/crumb pan by sliding it towards the operator’s side of the unit. 
  • Step 3. Remove the air filter - Lift and pull the air filter toward the front of the unit to remove it
  • Step 4. Remove remaining components - Remove the dividers, product bottom and rear heat duct.
  • Step 5. Wash removed components - Take the dividers, product bottom, rear heat duct, grease pan and air filter to a sink to wash them with dish soap and a sponge.
  • Step 6. Rinse components - At the sink, rinse off the dividers, product bottom, rear heat duct, grease pan and air filter with water.
  • Step 7. Dry components - Set the dividers, product bottom, rear heat duct, grease pan and air filter on a towel and leave them to air dry.
  • Step 8. Clean the unit interior - Use a soft cloth, dish soap and warm water to clean the interior holding area.
  • Step 9. Clean the unit exterior - Use a damp cloth to clean the exterior.
  • Step 10. Clean the vents - Wipe down the vents with a damp cloth.
    • Note. Be careful not to get water inside the unit via the vents.
  • Step 11. Reinstall components - Reinstall the rear heat duct, product bottom, dividers, air filter and grease pan.
  • Step 12. Wash the panel control (floor standing models only) - With a damp cloth and chlorine-free detergent, wash the plastic panel control, then thoroughly rinse it with a clean, damp cloth. Allow to dry.
    • Note. Don’t use abrasive cleaners, strong aromatic solvents, alcohol or other strong cleaning agents.

Carter Hoffmann Crisp N’ Hold Stainless Steel Cleaning Tips

Stainless steel requires specific techniques to keep it clean and polished. 

Routine Stainless Steel Cleaning

  • Step 1. Wipe down with soap - Use a soft cloth or sponge and soapy water to wipe down the stainless steel areas. 
  • Step 2. Rinse away soap - Rinse off the stainless steel areas with a wet cloth.
  • Step 3. Dry off unit - Using a separate cloth, dry off the Crisp N’ Hold.

Cleaning Smears, Stains & Water Spots

  • Cleaning smears and fingerprints - Use a soft cloth and stainless steel cleaner to rub away these spots. Then, buff the area with a dry cloth.
    • Note. Rub with the grain of the stainless steel.
  • Cleaning stains - Take a damp sponge to wipe away stains. Be sure to rinse and dry after the stain is cleaned off.
    • Note. Wipe with the grain of the stainless steel.
  • Cleaning hard water spots - Use a vinegar-soaked cloth to wipe away water spots on the stainless steel portions. Then, rinse and dry off the unit.
