Southbend Fryer Cleaning Instructions

While there are some parts of a fryer that won’t need to be cleaned every single day, it’s important to note what exactly needs attention and when so you don’t compromise the end product.

Daily Cleaning

  • Step 1. Turn the combination gas valve knob to the “PILOT” position.
  • Step 2. Place a container under the drain and drain the frypot.
  • Step 3. Remove the basket support frame and flush out any remaining in the frypot using a little bit of hot oil.
  • Step 4. Wipe down the basket support frame and the inside of the frypot with a clean cloth.
  • Step 5. Close the drain valve and strain the oil back into the frypot through a filter.
  • Step 6. Replace the basket support frame.
  • Step 7. Add oil or solid shortening to raise the oil level mark on the rear of the frypot.
  • Step 8. To resume cooking, turn the combination gas valve knob to the “ON” position.

Weekly Cleaning

  • Step 1. Follow steps 1 through 4 of the daily cleaning instructions.
  • Step 2. Close the drain valve and fill the frypot with a solution of warm water and a strong detergent or cleaner.
  • Step 3. Relight the fryer and gently boil the solution for about five minutes.
  • Step 4. Turn off the main burners and let the solution sit until the gum deposits are softened and the carbon spots and burned on grease spots can be rubbed off.
  • Step 5. Scrub the frypot walls and heat tubes, then drain it and rinse it with clean water.
  • Step 6. Refill the frypot with clean water and boil again.
  • Step 7. Turn off the gas and drain and rinse well.
  • Step 8. Wipe the inside dry with a clean cloth.
  • Step 9. Refill as specified in the manual.

Monthly Cleaning

  • Step 1. Perform the weekly cleaning instructions.
  • Step 2. Clean around the burners and orifices if there’s accumulated lint or debris.
  • Step 3. Visually check that all burner carry-over ports are unobstructed.

Semi-Annual Cleaning

  • Step 1. Examine and clean the venting system.
  • Step 2. Contact a Southbend authorized service technician to clean and adjust the unit for maximum performance.
