Unox ovens’ innovative design and incredible efficiency means these units are sure to become cornerstone pieces of equipment wherever they’re located. Since keeping high-performing units in good working order is important, this guide on how to clean a Unox oven gives clear instructions so you can perform regular maintenance on your machine quickly and easily.

Supplies

Clean your oven daily to maintain good hygiene, avoid steel corrosion and remove fatty food residues that may pose a fire hazard. Also, avoid using abrasive sponges, water jets, abrasive powders or corrosive chemicals since these may damage your unit. 

Pre-Cleaning Procedure

Be sure to wear gloves and protective eyewear when cleaning the unit.

  • Step 1. Turn off the unit - Cut power to the unit by pressing the electrical panel switch to OFF.
  • Step 2. Unplug the oven - Avoid electrical hazards by unplugging the power cord from the socket.
  • Step 3. Disconnect the water - Prevent leaks and spills by disconnecting the water supply.
  • Step 4. Shut off the gas (gas units only) - If applicable, turn off the gas.
  • Step 5. Let the oven cool down - Minimize the risk of burns by letting the oven cool down for a few minutes before beginning the cleaning procedure.

Cleaning the Exterior

If you decide to use detergents instead of soap, only use those approved by Unox so you don’t invalidate the warranty.

  • Step 1. Wash the exterior surfaces - Use warm water, mild detergent and a soft cloth to clean the external steel structures, oven cavity seal and core probe. 
  • Step 2. Rinse the surfaces - Wash away any remaining soap suds, dust particles or food residues with clean water and a soft cloth.
  • Step 3. Dry the exterior - Wipe up any remaining moisture with a clean cloth.

Washing the Interior 

Make sure the detergent doesn’t come in contact with skin, eyes or mucous membranes. If you come into contact with the detergent, follow the instructions on the safety data sheet.

  • Step 1. Connect the unit to a drainage system (if necessary) - If your unit isn’t permanently connected to a drainage system, remove the stopper and connect the unit to a drainage system before beginning the wash cycle. Otherwise, the interior may flood.
  • Step 2. Remove the trays - Take the trays out of the oven so water can flow through the cavity unobstructed and clean the interior thoroughly.
  • Step 3. Leave the trolley inside, but without the trays (units with trolley only) - If your oven has a trolley, you may leave it inside the unit during the wash cycle. However, be sure to remove any trays and lock the trolley in place using the front wheel brakes.
  • Step 4. Select the wash cycle - Use the control panel to choose the appropriate wash cycle.
  • Step 5. Start the program - Press the START/STOP button to begin the wash cycle. Let the cycle run the determined length.
  • Step 6. Disconnect the unit from the drainage system (if necessary) - If you had to temporarily connect your oven to a drainage system, disconnect your unit from the system and replace the stopper once the wash cycle is complete.

Maintaining Other Surfaces

Don’t use excessive pressure when wiping plastic surfaces and the control panel: they’re delicate and can be easily damaged.

  • Step 1. Clean plastic surfaces and control panel - Clean these areas with only warm water, mild detergent and a soft cloth. 
  • Step 2. Wash the oven door glass - Maintain both the internal and external door glass with warm water, mild detergent and a clean cloth. Alternatively, you can use detergent designed for glass surfaces instead of soap.
  • Step 3. Rinse the other surfaces - Wipe away any remaining suds, particles or residues with a clean, damp cloth.
  • Step 4. Dry the remaining surfaces - Use a clean cloth to soak up any remaining moisture on the plastic surfaces, control panel and door glass.

Resuming Normal Operation

Check to make sure the interior and exterior surfaces are completely dry before using the unit.

  • Step 1. Restore the gas connection (gas units only) - If your oven uses gas, reconnect the gas supply.
  • Step 2. Reconnect the water - Reestablish the water connection to your unit.
  • Step 3. Plug in the oven - Restore power to your unit by plugging the power cord into an electrical outlet.
  • Step 4. Power on the unit - Press the electrical panel switch to ON in order to switch on the oven.
  • Step 5. Use the unit normally - Once power is restored, resume normal use of the oven.
