How to Filter a BKI Fryer

BKI is a well-known name in the fryer game, producing trustworthy models so your commercial kitchen can prepare everyone’s favorite fried treats. To ensure that your fried menu items come out tasty and crispy, it’s important to filter out your BKI’s fryer pot once every three frying cycles. Luckily, the filtering procedure is simple to complete. Learn how to filter your BKI pressure fryer with our guide.

These instructions are applicable for the FKM-F and FKM-FC models.

Filtering a BKI Pressure Fryer

To achieve the best filtering results, the shortening should be hot. Be sure to wear proper safety gear when filtering. 

  • Step 1—Turn the unit off.
  • Step 2—Remove the fryer basket.
  • Step 3—Check the filter pad for any damage and to see if it’s clean. Also, check that the vat cover is positioned underneath the drain valve, and that the filter vat and filter screen are under the main drain valve before you begin filtering.
  • Step 4—Slowly open the drain to allow the shortening to flow evenly. This helps to prevent the hot shortening from splashing.
  • Step 5—Once the pot has fully emptied, close the drain.

Refilling the Pot Automatically

Prior to refilling, clean the fryer pot. 

  • Step 1—Close the lid to prevent the shortening from splashing.
  • Step 2—Move the FILL handle to the THRU POT position.
  • Step 3—Press the FILTER button on the FILTER/OFF/FRY switch.
  • Step 4—Wait 1 minute, then carefully open the lid to check the level of the shortening.
  • Step 5—Let the filter continue to fill the pot until it reaches the fill line or until air bubbles start to form.
  • Step 6—As soon as air is seen in the shortening, move the fill handle to the THRU HOSE position, then press the OFF button on the FILTER/OFF/FRY switch. This will help prevent shortening degradation and the filter pump and lines from being blocked by shortening.
  • Step 7—If the shortening has not reached the fill line, add more shortening until it does.

Refilling the Pot Through the Rinse Hose

  • Step 1—Check to make sure the rinse hose is connected to the rinse hose connector.
  • Step 2—While holding the hose by the handle, place the hose nozzle inside the pot.
  • Step 3—Hold down the lid over the hose nozzle to prevent shortening from splashing up.
  • Step 4—Move the FILL lever in the THRU HOSE position.
  • Step 5—Press the FILTER button on the FILTER/OFF/FRY switch.
  • Step 6—Wait 1 minute, then carefully open the lid while holding the hose by the handle to check the level of the shortening.
  • Step 7—Let the filter continue to fill the pot until it reaches the fill line or until air bubbles start to form.
  • Step 8—As soon as air is seen in the shortening, press the OFF button on the FILTER/OFF/FRY switch. This will help prevent shortening degradation.
  • Step 7—If the shortening has not reached the fill line, add more shortening until it does.
