How to Filter a Henny Penny Fryer
Henny Penny fryers are mainstays in a wide variety of commercial kitchens. Because they are such important pieces of equipment, it’s crucial that you take good care of your unit to help ensure your food comes out tasty and your fryer can keep frying. One task that should be completed regularly is filtering your Henny Penny fryer. This keeps the oil fresh while also ridding your unit of any debris or build-up. Thankfully, there’s an easy 10-step process you can follow to properly filter your unit. Take a look at our guide below for more info.
This filtering guide is applicable for 4-Head pressure fryer models like the PFE-500-CFA and PFG-600.
- Step 1—Turn off the COOK/PUMP switch and remove the basket.
- Step 2—Scrape off any build-up from the sides of the frypot with a metal spatula. Be careful to not scrape the heating elements on electric models or the curved surface on gas models.
- Step 3—Turn the left drain handle a half-turn counterclockwise, then slowly turn it to the fully open position.
- Step 4—While the oil is draining, use your Henny Penny cleaning brushes to clean the frypot and heating elements.
- Step 5—Once all of the oil has drained, brush or scrape the insides of the frypot.
- Step 6—Rinse the frypot according to the following instructions:
- 6a—First, attach the filter rinse hose to the quick disconnect fitting located in the inside of the door next to the filter valve handle. Connect the filter rinse hose by sliding the collar back onto the quick-disconnect fitting, then push it onto the unit’s fitting and let it snap into place.
- 6b—As you hold the wooden handle, ensure that the hose nozzle is pointed downward into the bottom of the frypot. Pull the lid over the nozzle, close the filter valve and turn the COOK/PUMP switch to PUMP. Take care to avoid excessive oil splashing as the oil will be hot.
- 6c—Rinse the inside of the frypot, focusing on areas like the heating elements on electric units and the bottom of the frypot.
- 6d—Once you’re done rinsing, close the drain valve by turning it clockwise.
- 6e—Turn off the COOK/PUMP switch.
- 6f—Detach the rinse hose from the quick disconnect fitting, then lift the fitting end of the hose to let any remaining oil drain back into the frypot.
- Step 7—Open the filter valve by turning the right filter valve handle counterclockwise. Then, turn the COOK/PUMP switch to the PUMP setting and pump all of the peanut oil out of the filter drain pan and back into the frypot. Be sure to hold the lid closed as the oil drains.
- Step 8—Once air bubbles start forming in the oil, you can close the filter valve. Turn the right valve handle clockwise to close it, then turn off the COOK/PUMP switch. This step prevents aeration in your shortening and helps prolong its life.
- Step 9—When the filtering process is done, you can empty and replace the condensation drip pan.
- Step 10—If operating after filtering, turn the COOK/PUMP switch to COOK and let the oil heat up.
