Lighting the Grill
Start up includes both lighting the grill and operating.
- Step 1. Open lids - Open all lids on the charbroiler.
- Step 2. Check all valves are off - Make sure that all the valve handles are in the OFF position.
- Step 3. Turn on gas supply - Turn the gas supply valve on and then wait 15 seconds.
- Step 4. Turn pilot valve on - Turn the light tube valve to the ON position.
- Step 5. Light gas - Insert a match or lighter into the holes located behind the wing door on the face of the grill.
- Step 6. Check for burning - Check to make sure that the lighter tube is burning.
- Step 7. Light other burners - After the lighter tube is lit, light any other main burners and check that they are burning properly.
Operating
Here are two steps to be aware of while operating the unit:
- Fill water pans - Fill the water pans to avoid any excess flare-ups.
- Adjust burner valve - Make any adjustments to the main burner valve as needed.
- Lid up or down - Cook with the lid up or down based on personal preference. For cooking over a long period of time over a low flame, keep the lid down.
Shut Down
- Step 1. Turn knobs off - Turn all the burner and pilot valve knobs to the OFF position.
- Step 2. Turn gas supply off - Turn the LP supply valve to the OFF position. For natural gas grills, turn the gas supply valve to the OFF position.

- Step 4. Close any lids - Close any lids or use protective covers until next use.
- Step 5. Disconnect cylinders - Disconnect the LP cylinders from the unit when not in use.
Flare Up Control
Excessive flare ups during grilling can ruin food and be a dangerous problem if not properly addressed. Here are some ways to minimize flare ups:
- Trim excess fat from meats before cooking
- Cook fatty meats on low setting
- Check grease tray installed and add 1” of water
- Don’t cover cooking grids with foil or use broiling pans
