How to Sharpen a Bizerba Slicer Blade
Slicer blades tend to wear over time with continuous use. When the time comes to sharpen them, make sure you follow the right steps. So, how do you sharpen a Bizerba slicer blade? Learn the right way to keep your Bizerba running like new with us at Parts Town!
Bizerba Slicer Sharpening Instructions
Blade wear can be caused by a buildup of fats from meat as well as damage from bone and more. After a while, be ready to sharpen your Bizerba slicer blade. The sharpening instructions are fairly simple. Follow these steps to get a sharper, like-new blade:
- Step 1—Make sure the machine is off.
- Step 2—Slide the cutting tray off of the slicer and move the tray on the left as far out of the way as possible using the crank on the bottom of the unit.
- Step 3—Place the sharpener on the tray and slide it up to the blade until you hear a click.
- Step 4—TIghten the sharpener against the tray using the knob at the end of the bent bar. Move the sharpener a little to make sure it doesn’t wiggle.
- Step 5—Turn on your Bizerba slicer.
- Step 6—Turn the knob of the sharpener down to “1” and let it spin for 30 seconds.
- Step 7—Turn the knob up to “2” for only 3 seconds.
- Step 8—Turn off the slicer and sharpener.
- Step 9—Remove the sharpener.
- Step 10—Wipe down the slicer with a damp rag to remove any dust or debris left by the sharpener.
How to Sharpen a Bizerba GSP Automatic Slicer Blade
Before you begin, make sure the sharpening stones and the slicer unit are clean. If the sharpening stones are dull, replace them immediately.
- Step 1—Put on cut-proof safety gloves and eye protection before you begin the sharpening procedure.
- Step 2—Turn off the unit and unplug it from the power source, and tilt the deflector away from the blade.
- Step 3—Set the slice thickness on the knob to “24” or until it stops to form a gap between the carriage and gauge plate.
- Step 4—Set the sharpener to “0.”
- Step 5—Attach the sharpener to the gauge plate.
- NOTE—The sharpener should make contact with the blade guard ring.
- Step 6—Hold both the sharpener and carriage in position as you use the screw knob to fasten the sharpener to the gauge plate.
- Step 7—Plug in and turn on the unit.
- Step 8—Engage the sharpening stone by setting it to “1.”
- Step 9—Turn on the blade motor to start sharpening the blade.
- Tip—Sharpen the blade until a burr forms on the right edge of the blade.
- Step 10—Once the blade is sharpened, set the sharpener to “0.”
Honing the Blade
- Step 1—With the blade motor running, set the sharpener to “2.”
- Step 2—Hone the blade for about 3-4 seconds.
- Step 3—Turn the machine off and wait for the blade to stop rotating before removing the sharpener.
- Step 4—Set the sharpener to”0.”
- Step 5—Remove the sharpener.
- Step 6—Once the sharpener is off the unit, set the slice thickness knob to “0.”
Cleaning the Blade
- Step 1—With the unit still off, remove the blade cover.
- Step 2—Use a dry cloth to clean the front of the blade.
- Step 3—Clean the other side of the blade.
- NOTE—Wipe from the center and work your way outward.
- Step 4—Insert a cleaning cloth between the blade and guard ring.
- Step 5—Use your hands to turn the blade and cloth against the inside of the guard ring.
- Step 6—Clean the rest of the unit with a dry cloth or disposable brush.
- Step 7—If needed, clean thoroughly with water and mild detergent.
