How to Use a Bizerba Slicer

Preparing & Reference Run
Before you go to use a slicer, you must prepare it and perform a reference run.
- Step 1: Plug in the slicer.
- Step 2: Turn on the slicer by pressing the green power button.
- Step 3: Perform a test reference run by pressing the auto slice button.
- Note: The carriage will then slide back and forth automatically.
- Step 4: Press the auto slice button again to stop the carriage from moving.
- Step 5: Put on food-safe gloves to protect the product, your hands and the unit.
- Step 6: Put down either wax paper or a bin to catch product.
Using a Bizerba Slicer
Once you have the machine set up and your supplies on hand, you can get slicing. Here are instructions on how to use a Bizerba slicer:
Making Long Cuts
- Step 1: Pull the carriage away from the gauge plate.
- Step 2: Place product on the rear wall of the carriage and adjust fixation devices accordingly.
- Step 3: Turn the product holder inward and position it on the product to secure it.
- Step 4: Adjust the knob to set the slicing thickness.
- Step 5: On the control pad, use the buttons to adjust the width and speed as desired.
- Step 6: If the blade doesn’t turn on automatically when you power on the unit, use the blade “ON/OFF” button to start it.
- Step 7: Press the carriage “ON/OFF” button to power up the carriage motor and begin slicing. Sliced product will then fall onto the wax paper or into the bin in the depositing area.
- Step 8: Press the carriage “ON/OFF” button when slicing is finished.
- Note: The carriage will move towards you and the blade will be on hold.
- Step 9: Turn the slicing thickness knob to 0.
- Step 10: Press the red button to turn off the unit.
Slicing Product Ends
- Step 1: Pull the carriage away from the gauge plate.
- Step 2: Remove product fixation devices from the carriage.
- Step 3: Place product on the rear wall of the carriage and place the product holder behind the product.
- Step 4: Adjust the knob to set the slicing thickness.
- Step 5: On the control pad, use the buttons to adjust the width and speed as desired.
- Step 6: If the blade doesn’t turn on automatically when you power on the unit, use the blade “ON/OFF” button to start it.
- Step 7: Press the carriage “ON/OFF” button to power up the carriage motor and begin slicing. Sliced product will then fall onto the wax paper or into the bin in the depositing area.
