How to Use a Merco Forced Air Holding Cabinet
When it comes to keeping food temperatures consistent and holding them until serving, understanding how to use a Merco Forced Air Holding Cabinet is essential. This cabinet uses forced air to keep food items warm and ready without compromising texture or flavor. By knowing how to use this appliance, you can stay on top of food quality.
The holding cabinet heats up to the pre-set default temperature. Adjusting bin locations, times and temperatures can be done from a PC application.
Using a Merco Forced Air Holding Cabinet
Typical operation of the holding cabinet has 3 simple actions to run:
- Step 1. Push power button - Push the power button to turn the machine on. It will start to preheat the cabinet.
- Step 2. Load bin with product - Pull the tray out, load the product and reinsert the tray.
- Step 3. Empty bin - Pull the tray out and remove the product. Reinsert the tray back into the cabinet.
Activate Heating Mode
When the unit is in active heat mode it will display the product name and the active day part LED light will be ON. During active heating mode, press and hold enter for 3 seconds to scroll the software version on the display.
Temperature View Mode
To enter the temperature view mode, press the temperature button. The average temperature for each zone will be displayed. To exit this mode just press the cancel button.
Changing Day Part
To change the day part to one of six day portions, press the day part button. LED lights will display to show which day part is current.
- 1 Breakfast - LED 1 is lit up
- 2 Change over 1 - LED 1 & 2 are lit
- 3 Lunch - LED 2 is lit up
- 4 Change over 2 - LED 2 & 3 are lit
- 5 Dinner - LED 3 is lit up
- 6 Change over 3 - LED 1 & 3 are lit
