How to Use a Merco Visual Holding Cabinet
Having a working holding cabinet is an important part of commercial kitchens, but you need to know how to run it for the best results. When you aren’t sure how to use a Merco visual holding cabinet, we can help walk you through some steps. We will help you through understanding the user interface so you know exactly what you’re looking at.
General Operations
- Turning on the unit - Use the power switch to turn the unit on.
- Resetting trays - Reset expired trays by selecting them on the screen.
- Resetting or resuming trays - For trays that are removed and returned, select the green check to reset or the red ‘X’ to resume.
- Bring up home screen - Press the home button on the screen to return to the home menu.
Press & Go Screens
The zones on the screen will display what part of the process each zone is at. The screen will display each zone as pre-heating upon initial start-up, then beep and display gray when ready for use. When a tray is loaded, the zones will display as green with a timer. The screen will give a warning time while displaying yellow and then go red and beep when the timer runs out.
Screen Icons
The press & go screen has icons that give access to different functions.
- Home - The home icon brings up the home screen. From the home menu, you can select the press & go icon to get back to the press & go screen.
- Day Part - This icon allows you to choose a different menu, bringing up the menu options. Current active timers will carry over to the new menu until reset.
- Lock - The lock icon can disable the touch screen for 10 seconds to allow it to be cleaned.
- Wifi - The wifi icon shows the wifi and local network status of the machine. It will display different icons depending on if there is a connection or not.
Deleting Menu Pages
To make changes on any of the menu pages, try the following steps:
- Step 1. Enter passcode - A passcode needs to be entered to make any changes on the menu pages. If the passcode is accepted, the lock icon will show it unlocked.
- Step 2. Select the product - For any unwanted product, select it and then the delete X icon.
- Step 3. Confirm selection - Press the green check to confirm your selection.
Changing Zone Product
To delete or change a product from a zone, follow these steps below:
- Step 1. Press and hold the product - Hold your finger down on the product for 3 seconds to get a pop-up screen.
- Step 2. Confirm selection - Confirm the request to delete the product from the zone.
- Step 3. Select zone - Select a hot holding zone to add a product.
- Step 4. Select group or product - From the pop-up screen, select the desired product or group.
- Step 5. Save selection - Press the green check to save your selection.
