How to Use a Middleby Pizza Oven

Before you can serve up margarita or pepperoni pizza, you need to know how to operate your pizza oven. Below we will guide you through how to use a Middleby pizza oven and help you with startup and shutdown operations. That way you can quickly get the oven going and pizza cooked to perfection. The following guide is designed for Middleby PS520 series ovens and PS528 series ovens. 

How to Use a Middleby Pizza Oven

Startup Operation

  • Step 1. Turn on the blower fan - Turn the BLOWER switch to the ON position. Air circulation needs to be on before starting any cooking or baking process.
  • Step 2. Turn on the conveyor belt - Turn the CONVEYOR switch to the ON position to start the conveyor belt moving. 
  • Step 3. Set the temperature - Set the temperature controller to your desired temperature. 
  • Step 4. Turn the heat on - Turn the HEAT switch to the ON position and wait for the heat light to turn on. 
  • Step 5. Wait for oven cycling - The oven will reach temperature in 20 minutes and after waiting an additional 30 minutes for the oven to cycle. Then the oven will be ready for cooking. 

Shutdown Operation

  • Step 1. Turn off the blower fan - Turn the BLOWER switch to the OFF position, so air stops circulating and the fans are off. 
  • Step 2. Turn off the heat - Turn the HEAT switch to the OFF position. This will allow the oven to start cooling down.
  • Step 3. Check for excess food product - Check for any left over food product on the conveyor belts and clear off any leftovers.
  • Step 4. Turn off conveyor belt - Turn the CONVEYOR switch to the OFF position.
