A sundae is nothing without that chocolatey blanket of warm, gooey fudge that adds a dimension of flavor and contrast. Fudge warmers not only provide consistent temperature control and storage, but they also enhance presentation and reduce food waste. But without knowing how to use a Server hot fudge warmer, you might as well not have one at all. That's why we've compiled this handy guide to cover setup, takedown and the steps involved in the rethermalization and hot food holding process.

Hot Fudge Warmer Set-Up Instructions

Before you begin warming or reheating food, you’ll need to set yourself up for success. That starts with preparing the unit for use. Follow these instructions on how to use a Server hot fudge warmer to get started:

  • Step 1. Fill the hot fudge warmer with water – Fill the basin with filtered water up to but not past the fill line. It’s a good idea to check the water levels periodically throughout its use to ensure consistent and well-rounded heating.
    • FS-4 models: 2.5 cups of water (0.59 liters)
    • FS-7 model: 7 cups of water (1.6 liters)
    • FS-11 model: 11 cups of water (2.6 liters)  
  • Step 2. Install the inset in the water vessel basin – Next, place the inset inside the water vessel basin.
    • Note: Never cook food directly in the water vessel, which could damage the equipment. 
  • Step 3. Plug in and turn on the unitPlug in the commercial hot fudge warmer before turning the switch to the “on” position.
  • Step 4. Set the thermostat – Pull the thermostat knob out to adjust the temperature and back in to lock. 

Rethermalization & Hot Food Holding Instructions 

You can hold and rethermalize food at a hot temperature in your unit. Learn how to use a Server hot fudge warmer and pump in more detail below:

  • Step 5. Preheat the unit – Whether you're reheating product or holding it at temperature, you’ll need to first start preheating the Server hot fudge warmer for 5 minutes by turning the thermostat knob to its maximum setting. Make sure the lid is on, and the water is all the way to the fill line before you start the timer.  
  • Step 6. Add food to the inset – Place the fudge into the inset for holding or fudge that has already been preheated to 150℉ (66℃) into the inset for rethermalization.
    • FS-4 models: 4 quarts (16 cups)
    • FS-7 models: 5.5 quarts of product (22 cups)
    • FS-11 models: 8 quarts of product (32 cups)
  • Step 7. Monitor temperatures closely – Once food reaches a safe serving temperature of 165℉ (74℃), adjust the thermostat so that food holds at a minimum of 140℉ (60℃) to prevent food-borne illnesses but ideally at 150℉ (66℃) or above.
    • Note: Do not add cold food to the unit if hot food is already being held.

Hot Fudge Warmer Take-Down Instructions

You’ve learned how to use a Server hot fudge warmer and fed a lot of people, but now it’s time to wrap things up. Follow the instructions below to properly take down, clean and store the unit:

  • Step 8. Turn off and unplug the unit – When you’re done for the day, start by turning the switch to the “off” position and unplugging the unit.
  • Step 9. Remove the inset – Next, take the inset out of the water vessel basin and empty the water.
  • Step 10. Thoroughly clean and dry the unit – It’s a good idea to clean the Server hot fudge warmer and dry with a soft cloth after every use so that it’s ready to go and safe to use for next time!
