How to Use a Taylor Soft-Serve Ice Cream Machine
Taylor soft-serve ice cream machines allow operators to serve frozen treats quickly and efficiently. If you need help operating your unit, this guide explains how to use a Taylor soft-serve ice cream machine so it stays sanitary and efficient.
These instructions are for soft serve freezer models such as the 750, 751, 754, 774, 791 and 794.
Supplies
- Fresh Mix
- 2 Buckets
- Lubricant
- Sanitized Stainless Steel Rerun Container (with Lid)
- Brushes
- Cool, Clean Water
Priming the Freezing Cylinder
Make sure your unit is properly cleaned and sanitized before use. For detailed instructions, refer to either the manual or this Taylor ice cream machine cleaning guide.
- Step 1. Place a bucket under the spout - Then, lower the draw handle while making sure the prime plug is still in the UP position.
- Step 2. Pour 2 gallons (7.6 liters) of fresh mix into the mix hopper - Allow the mix to flow into the freezing cylinder. This will force out any remaining sanitizing solution.
- Step 3. Raise the draw handle - Once there’s a strong flow of mix from the door spout, raise the draw handle.
- Step 4. Push down the prime plug - When a steady stream of mix begins flowing from the prime plug opening, push down the prime plug.
- Step 5. Lubricate the o-rings - Lubricate the air tube o-rings on the end with the small hole on the side.
- Step 6. Install the air tube - Insert the air tube with the air orifice installed into the mix inlet hole in the mix hopper.
- Step 7. Press the AUTO button and check the refrigeration system - Make sure the refrigeration system is operating. The refrigeration system is operating if:
- 750 model - The AUTO light is illuminated.
- 751, 754, 774, 791 and 794 models - The MIX light is “ON.”
- Step 8. Fill the hopper with mix - Once the hopper fills up to the mix level sensing probe, the MIX LOW light will shut off automatically.
- Step 9. Cover the mix hopper - Put the mix hopper cover on top of the hopper.
- Step 10. Repeat steps for the other side of the freezer - For 754, 774, 791 and 794 models, perform the previous steps a second time.
Draining Product from the Freezing Cylinder
If local health codes permit the use of rerun, store the sealed rerun container in a cooler for later use. Otherwise, discard the rerun.
- Step 1. Power down the compressor and beater motor - Press the AUTO button to shut down the compressor and beater motor.
- Step 2. Turn off the mix hopper refrigeration system - Push the MIX button to turn off the mix hopper refrigeration system.
- Step 3. Drain and discard rerun - Place a sanitized, stainless steel rerun container under the door spout. Then, press the WASH button and lower the draw handle to drain the remaining product from the freezing cylinder and mix hopper. When product stops coming out, press the WASH button, raise the draw handle and close the container.
- Step 4. Repeat the process - Repeat the previous steps for 754, 774, 791 and 794 models
Rinsing the Machine
- Step 1. Clean the mix hopper - Pour 2 gallons (7.6 liters) of cool, clean water into the mix hopper. Use the brushes provided to scrub the mix hopper, mix inlet hole and mix level sensing probe.
- Step 2. Flush out the freezing cylinder - Place a bucket beneath the door spout, raise the prime plug and press the WASH button. Once a steady stream of rinse water is coming out of the prime plug opening, lower the draw handle. After draining all the rinse water from the freezing cylinder, raise the draw handle and press the WASH button.
- Step 3. Repeat the previous steps - Repeat the previous steps on the other side of the freezer for 754, 774, 791 and 794 models.
