Master-Bilt heater/proofers have a multi-purpose design that makes them extremely valuable assets where space is limited. Since essential units such as these need to be maintained properly, this Master-Bilt heater/proofer cleaning guide will help you keep your equipment working flawlessly while maintaining the highest standards of hygiene.

These instructions are for the HP6A-LX heater/proofing cabinet.

Supplies

Be sure to cut power to the unit before cleaning to reduce the risk of electrical hazards. Never use harsh chemicals like chlorine or abrasive tools such as steel wool, since these can damage the unit.

Cooling Down the Unit

  • Step 1. Turn the unit off - Flip the power switch to “Off.”
  • Step 2. Unplug the machine - Minimize the risk of electric shock by unplugging the power cord from the outlet.
  • Step 3. Remove product from the heater/proofer - Take out any food product in the unit and either relocate it to another unit or discard it.
  • Step 4. Cool down the machine - Open the door and allow the interior to cool down to a safe temperature.

Draining the Machine

  • Step 1. Pull unit forward - Improve access by sliding the heater/proofer away from the wall. If the pan has water, move the unit carefully in order to prevent spillage.
  • Step 2. Drain the unit - Take out the water pan and pour out the water. Then, drain the trough by placing a pan under the unit and pushing up the clamp tab. Once the trough is empty, push the clamp in to close it.
  • Step 3. Remove detachable parts - Pull off the ledge, heater assembly, drip trough and air tunnel, then set them aside.

Cleaning the Interior

  • Step 1. Wash the inside surfaces - Clean the unit interior with warm water, mild detergent and a soft cloth.
  • Step 2. Rinse the unit interior - Wipe away any remaining food particles or detergent residues with a damp cloth.
  • Step 3. Air dry the inner surfaces - Allow the unit interior to air dry completely.

Maintaining the Exterior

  • Step 1. Clean the outer surfaces - Wash the heater/proofer exterior with warm water, mild detergent and a soft cloth.
  • Step 2. Rinse the outside - Remove any remaining dust particles or soap suds with a damp cloth.
  • Step 3. Air dry the exterior - Let any excess moisture on the exterior surfaces evaporate away.
  • Step 4. Apply stainless steel polish - Use a soft cloth to rub stainless steel polish or lemon oil onto the exterior surfaces. Remember to wipe with the grain in order to avoid streaks or scratches.

Reassembling the Unit

  • Step 1. Reinstall detached parts - Return the ledge, heater assembly, drip trough and air tunnel to the unit.
  • Step 2. Reposition the unit - Slide the machine back into its original location.
  • Step 3. Refill the pan (if necessary) - Fill the pan with 1-1/2 quarts (1.42L) of hot water if you’re going to use the unit as a proofer; if not, leave the pan empty.

Resuming Normal Operation

  • Step 1. Restore power to the heater/proofer - Reconnect the unit to power by plugging the electrical cord into an outlet.
  • Step 2. Turn on the machine - Flip the power switch to “On.”
  • Step 3. Use the unit normally - You may now resume normal operation of the unit.
