Merco Holding Cabinet Cleaning

Is it time to start cleaning your Merco Holding Cabinet? They are easy to clean and designed specifically for low maintenance. Below we have some suggestions on cleaning your holding cabinet. Always make sure you check your specific unit’s manual for any details on cleaning chemicals and extra procedures. 

Before starting any maintenance or cleaning, always make sure to unplug the unit from any power supply.  Safeguard power so it cannot be accidentally restored. Also be sure to allow the appliance to cool before touching it. These are vital steps to take before starting to prevent any injury. 

Exterior Maintenance

Be sure not to use any steel wool or wire brushes while cleaning any stainless steel. 

  • Exterior panels - The stainless steel exterior was designed to be easy to clean. It just needs a daily wipe down with a damp cloth. Units that have grease build-up can use hot water and a mild soap to rinse the exterior. Always wipe with the grain of the stainless steel and be sure to dry thoroughly. 
  • Touch screens - If your unit has touch screens, wipe those down with a damp cloth on a daily basis. Be sure not to splash water or cleaning compounds around electrical parts. You can also use this time to gently wipe around the power switch as well, taking the same care. 

Interior Cleaning

Just like the exterior, be mindful of the cleaning tools you use on any of the interior surfaces and parts. Do not use abrasive tools like steel wool or wire brushes on any part of the cabinet. Use only mild soaps or detergents to clean any stuck-on grease. 

  • Trays, tray seals and air diffusers - Pull out any product trays, tray seals or air diffusers from the unit. These can be cleaned through the dishwasher for easy cleaning. If you prefer to clean these in the sink, you can hand wash them in warm soapy water. Dry these components thoroughly before attempting to reinstall any into the holding cabinet.
  • Interior shelf - While the product trays and parts are out of the cabinet, you can wipe down the interior shelf with a damp cloth. If there is grease or food build-up, you can use warm soapy water on the cloth to clean the shelf. Be sure not to use any abrasives on it, and do not let excess water splash in the interior. 

Plastic Tray

If your holding cabinet has a plastic tray then it requires a slightly different cleaning procedure than the metal trays and parts. 

  • Tray cleaning - Always properly dilute and rinse any detergent according to the manufacturer’s directions. You can clean plastic trays with a food-approved detergent and rinse the tray. Be sure not to leave any residue behind, and do not use any organic solvents on the tray.
