Merrychef conneX® Oven Cleaning

Merrychef ovens have a durable design and an intuitive touchscreen that make using these reliable units easy and straightforward. Since proper care for these versatile units is crucial, this Merrychef conneX® oven cleaning guide will help you maintain the interior and exterior surfaces on a daily basis so your unit stays sanitary and works dependably.
These instructions are for Merrychef conneX® 12 and 16 units.
Supplies
- Warm Water
- Mild Detergent
- Cleaning Cloths
- Rubber Gloves
- Soft and Hard Bristle Brushes
- Scrub Pad (Non-Abrasive)
- Merrychef Oven Cleaner
- Merrychef Oven Protector
- Heat-Proof Gloves (optional)
- Dust Mask (optional)
- Tray with Ice Cubes or Cold Water (optional)
Don’t use abrasive instruments or harsh chemicals as these can damage your unit. To minimize potential damage and shock hazards, avoid spraying water onto oven surfaces and ensure that the USB port is covered during cleaning.
Cleaning Instructions
Cooling Down the Unit
Be sure to wear personal protective equipment to reduce the risk of injury from burns or chemicals.
- Step 1. Begin cooling down the unit - To minimize burn risks, cool down the unit by selecting the “Clean” button while on the Home screen. If the unit is in another mode, such as Quick Serve or Manual, start the cooling cycle by pressing the “Power” button.
- Step 2. Leave the door ajar/use a cooling tray - Help the oven cool down faster by either leaving the door slightly open or placing a tray filled with ice cubes or cold water in the unit. If using a cooling pan, press the green checkmark once it’s placed in the oven.
- Step 3. Let the heat dissipate - Allow the unit to cool down to at least 122° F (50° C): this should take about 20 minutes.
- Step 4. Remove the cool down pan (if using) - If you placed a cooling pan in the unit, remember to remove it once the oven has cooled down to the desired temperature: don’t let it sit in the unit overnight.
Cleaning the Interior
Don’t spray water directly into the oven cavity as the heat may produce scalding-hot steam.
- Step 1. Brush away food particles - Use a brush to remove food particles from the oven cavity.
- Step 2. Remove the cook plate - Pull the cook plate out of the unit.
- Step 3. Apply cleaner to the unit interior - Spray approved oven cleaner onto a non-abrasive pad and then wipe the sides, back, base and door while avoiding the door seals and roof of the cavity. Let the cleaner sit for 5-10 minutes.
- Step 4. Wash the cook plate - While the cleaning chemical is soaking, clean the cook plate with warm, soapy water and then dry it with a clean, soft cloth. Once the cook plate is clean, set it aside and continue with the cleaning procedure.
- Step 5. Remove the cleaning chemical from the interior surfaces - Wipe off the cleaner from the sides, back, base and door with a wet cloth, then dry the oven cavity with a clean cloth.
- Step 6. Apply protector to the interior surfaces - Use a soft cloth to apply approved oven protector onto the sides, back, base and door while avoiding the door seal and roof of the cavity.
- Step 7. Clean the door seal - Gently wipe the area around the door seal with a clean cloth.
- Step 8. Return the cook plate to the unit - Once the interior is clean, replace the cook plate.
Maintaining the Filter & Exterior
Avoid spraying water onto the exterior surfaces as this can cause a short-circuit that increases the risk of electric shock.
- Step 1. Remove the air filter - Open the cover and pull out the air filter.
- Step 2. Clean the filter - Wash the filter in clean, soapy water and then dry it with a soft cloth.
- Step 3. Reinstall the air filter - Once the filter is clean and dry, return it to the unit
- Step 4. Confirm that the filter is reinstalled - Press the green checkmark to confirm that the air filter has been returned to the unit: if you don’t, the unit won’t allow you to progress to the next step in the cleaning procedure.
- Step 5. Complete cleaning sign-off (if selected) - If “Cleaning Sign Off” is selected in the cleaning settings, enter your initials to confirm that you’ve completed the cleaning procedure.
- Step 6. Wait for the unit to turn off - Once the interior and filter cleaning procedures are done, the unit will power down.
- Step 7. Wipe the unit exterior - After the unit powers down, clean the outside surfaces with a damp cloth, then wipe away any excess water with a dry cloth.
- Step 8. Resume normal operation - Now that the oven is clean, you can use the unit normally.
