Whether you’ve just opened a pizza shop or thought you’d try adding something new to freshen up your menu, you’ll need to know the logistics of controlling the temperature and setpoints on your Middleby Marshall pizza oven. Since every house special and personal pizza differ from restaurant to chef, this oven won’t be coming with a pre-approved cooking cheat sheet or chart.

Changing the Setpoint Temperatures
Setpoint temperatures will come in especially handy when memory fails you. And with each pizza liking to bake in its own temperature sweet spot, that’s a lot to remember. The good news is the oven will keep track of all of these programmed temperatures for you. All you have to remember is how to toggle through them. This is how you do it:
- Step 1. Press the scroll key – The setpoints should appear in the upper display. You’ll want to make sure these are set to the correct baking temperature. However, if they aren’t you’ll have to change the setpoint. To do this, press the scroll key until the lower display goes blank. You’ll find the scroll key located in the lower right hand corner decorated with a thermometer and arrow key symbol.
- Step 2. Adjust the temperature – Using the up and down arrows, toggle until you land on the appropriate temperature. Keeping your finger pressed to the arrow will increase how fast you can adjust the temperature.
Displaying the Actual Temperature
Great, the pizza oven is heating up and well on its way to baking your quota of pizza for the day. But how do you know when it’s ready for its first job? Read on to figure out how to display the actual temperature on your Middleby Marshall pizza oven:
- Step 1. Wait until the heat LED is on – You can’t display the actual temperature unless the heat light is on. If you notice the heat light does come on, this means the gas burners have failed to light and the oven is not heating. If this is the case, turn off the heat, blower and conveyor switches and wait five minutes before turning them back on again.
- Step 2. Press the scroll key – Once the heat light has blinked on, press the scroll key. Again, this is the button in the lower right hand corner of the temperature controller indicated by a thermometer and arrow key symbol. The actual temperature will display in the lower screen.
- Step 3. Wait 10 minutes before baking – With the actual temperature now displayed, you can keep tabs on how hot your oven is getting. This is important because you’ll want to wait at least 10 minutes after the oven has reached cooking temperature before popping in a pizza to allow time for the temperature to stabilize.
Programming the Power Output
Changing and displaying the setpoint temperatures are all well and fine, but maybe you need to adjust the power output to get your pizzas cooking a little faster. Here’s how you do it:
- Step 1. Hold the star and up keys – To enter programming mode, hold the star and up keys together for three seconds. You should see “PXX” display on the screen.
- Step 2. Adjust the power output – Using the up and down arrows, you can program the percentage of power output.
- Step 3. Exit the program – To exit, hold the star and up keys together again for three seconds.
Locking and Unlocking the Set Point Temperatures
Everyone has accidentally bumped a screen a time or two only to later realize their mistake. Or maybe you’re on the other side of it and are pounding on the keys to no avail. You can prevent these silly hiccups entirely by locking or unlocking your controller.
- Step 1. Press the star key – Hold down the star key for three seconds.
- Step 2. Select set point lock – Use the scroll key to select the set point lock option.
- Step 3. Lock or unlock the controller – Toggle the up and down buttons to turn the lock off or on.
- Step 4. Exit the program – Hold down the star key again for three seconds to exit the program.
Changing the Temperature Scale
To change between Farenheit and Celcius, all you have to do is hold the up and down keys at the same time for three seconds.
