Montague Broiler Cleaning Instructions

Your Montague broiler is an invaluable member of your commercial kitchen, helping you prepare delicious meals for your customers. One of the most important preventative maintenance tasks you can do to your broiler is to regularly clean it. Cleaning your broiler on a daily and weekly basis helps it run efficiently while keeping it sanitary. Learn how to properly clean your Montague gas broiler with our guide below.
This cleaning guide is applicable for radiant model series like the UF, UFS, UFLC, UFSM, UFSC and UFLCS. Applicable models include the UF-36R, UFLCS-30R, UF-48R and UFSM-48R.
Supplies
- Wire cleaning brushes
- Cleaning cloths
- Degreaser
- Compressed air
- Fine grit sandpaper
- Mild detergent
Daily Cleaning Instructions
- Step 1—Turn off and unplug the unit. Allow the broiler to cool down.
- Step 2—Remove the cooking grates and clean both sides with a wire cleaning brush to scrape off any food residue.
- Step 3—Remove the drip tray and dispose of any grease and food debris. Once emptied, wash the tray with warm, soapy water. Dry it completely, then place it back in the unit.
- Step 4—Remove the debris screen and remove all debris that’s accumulated onto it. Once it’s cleaned off, place it back in the unit.
- Step 5—Wipe down the heat shields with a damp cloth or degreaser.
Weekly Cleaning Instructions
- Step 1—Turn off and unplug the unit. Allow the broiler to cool down.
- Step 2—Remove the cooking grates to access the burners.
- Step 3—Clean the burners with a stiff wire brush, making sure to check the ports for any clogs. If the ports are clogged, clean them out with a small wire brush or ice pick.
- Step 4—Check the pilot flame by turning it on and observing the flame. If it’s yellow or weak, that indicates that the pilot orifice needs to be cleaned. The pilot orifice can be cleaned with compressed air or a very fine grit sandpaper.
Periodic Cleaning & Maintenance
These cleaning tasks should be performed by an authorized service technician.
- Have the burner valves checked and lubricated if the valves are difficult to turn.
- Have the burner box serviced.
