Montague Fryer Cleaning

Your Montague fryer likely sees a lot of action in your commercial kitchen. To ensure it continues to work as it should, it’s crucial that you keep it cleaned on a regular basis. If you’re unsure of how to do so correctly, take a look through our handy Montague fryer cleaning guide.

Daily Cleaning

Inspecting the Fryer

Before or during the cleaning procedure, it’s important to check various parts of your fryer to ensure they’re in safe, operating condition. Make sure you look at these areas on your unit:

  • Frayed or loose connections with all your wires and cords
  • Inspect the frypot and the inside of the cabinet for leaks or foreign materials
  • Check any additional accessories
  • Ensure that the ceramic burner targets are positioned correctly above each orifice, and that the flame reaches 2-½ in (60mm) above the orifice

Cleaning Instructions

  • Step 1—Clean the interior cabinet with a clean, dry cloth.
  • Step 2—Wipe down all metal surfaces with a clean, dry cloth to remove any dust, debris or splattered oil/shortening.
  • Step 3—Use a clean, damp cloth with mild dishwashing detergent to wipe down the exterior of the fryer cabinet. Use another cloth to rinse and dry the exterior.
  • Step 4—Filter the cooking oil/shortening at least once per day or more depending on frequency of use.

Quarterly Cleaning

Once per quarter, be sure to remove any and all carbonized cooking oil that’s accumulated on the inside of the frypot.
