Supplies
- Warm Water
- Mild Detergent
- White Vinegar
- Cleaning Cloths
The following cleaning instructions should be completed daily. Don’t use abrasive pads like steel wool since they can damage the unit. If you choose to use mild detergent on the cart body, be sure to rinse it thoroughly, as chemical residues can contaminate food and damage equipment.
Pre-Cleaning Procedure
- Step 1. Unplug the cart - Disconnect the power cord from the outlet to cut electricity to the unit.
- Step 2. Remove food product - Transfer any food product to another unit or discard it.
- Step 3. Allow the machine to cool down - Minimize the risk of burns by letting the unit cool down before proceeding.
- Step 4. Remove the pan(s) - Take out the steam table pan(s) and set them aside.
- Step 5. Empty the well - Remove the water bath well, pour out the water and then set it aside.
Maintaining the Unit
- Step 1. Wash the well and pan(s) - Clean the heated water well and steam table pan(s) with warm water, mild detergent and a soft cloth. Rinse away any remaining suds or residues before drying thoroughly.
- Step 2. Wipe the body interior - Use a damp cloth to clean the inner surfaces, then dry with a soft cloth.
- Step 3. Clean the cart exterior - Wipe the outer surfaces with a damp cloth, then dry with a clean cloth to remove excess moisture.
- Step 4. Descale the well and pan(s) (if needed) - Remove scale by filling the well and pan(s) with water and adding white vinegar in the ratio of 1 teaspoon per cup of water. Let the solution soak for 15-30 minutes, drain, rinse and then dry the well and pan(s) thoroughly.
Resuming Normal Use
- Step 1. Reinstall the well - Return the water bath pan to the cart.
- Step 2. Fill the well - Pour about 4 quarts (3.785L) of water into the well.
- Step 3. Return the pan(s) to the unit - Reinstall the steam table pan(s) in the cart.
- Step 4. Plug in the cart - Restore the electrical connection by plugging the power cord into the outlet.
- Step 5. Use the unit normally - You may now resume normal use of the machine.
