Nemco Hot Dog Cart Operating Instructions

These directions are for 6550 Series mini cart models, such as the 6550-DW.
Directions
- Step 1. Put on protective gloves - Wear heat-proof gloves or mitts to reduce the risk of burns when operating the equipment.
- Step 2. Place the unit on a flat surface - Position the machine on a flat, stable surface, such as a countertop or table.
- Step 3. Pour water into water bath - Fill the heated water well with approximately 1”(2.54CM) or 4 quarts (3.785L) of water. Avoid overfilling the well to prevent water from overflowing when you insert the food pan.
- Step 4. Plug in cart - Power on the machine by connecting the power cord to an outlet.
- Step 5. Cover the heated water well - Place an empty pan over the water bath well in preparation for preheating.
- Step 6. Heat the water - Adjust the heat control knob to the maximum setting and allow the machine to heat the water. Heat for 15 minutes if using hot water or 25 minutes if using cold water.
- Step 7. Put food pan in unit - Insert a steam table pan with food into the machine. If not serving the food immediately, cover the unit to help retain heat.
- Step 8. Set the temperature - Turn the heat control knob to the desired setting.
- Step 9. Check water level periodically - Monitor the water in the well; if it drops significantly, add hot water.
Safety Guidelines
Operating Without Water
Don’t use the unit without water in the heated well since wet operation is required for even heat distribution to keep food at a safe temperature.
Overfilling the Well
Avoid filling the water well above the soup tureens, as this may cause water to overflow when inserting the food pan. Overflowing water can come into contact with electrical components, increasing the risk of electric shock.
Wearing Protective Gloves
Reduce the risk of injury by wearing protective gloves or mitts when pouring in hot water, lifting up the food pan or checking on the water level as steam can cause burns.
