How to Clean and Maintain a Hickory Continuous Rotisserie Oven

Old Hickory Rotisserie Oven Cleaning & Maintenance

Rotisserie ovens cook delicious food but can get extremely messy along the way. Hickory Continuous Rotisserie Ovens have an easy list of cleaning duties to perform throughout the work day and year. See the list below for how often you should be cleaning and tips on cleaning some of the more delicate oven parts. 

Daily Cleaning

All the following tasks can be completed at the end of the work day to help keep the rotisserie oven properly maintained. 

  • Start on the exterior - Use a stainless steel cleaner and soft cloth to clear off any dirt or marks. Be careful not to use any abrasive cloths to prevent scratching the stainless steel. 
  • Gently clean the glass - Before cleaning, make sure the glass has cooled. Use a soft cleaning rag and degreaser to clear off the glass. If there is carbon build up, you can use a plastic scraper to remove. Do not use any abrasive tools like steel wool on the glass to prevent shattering.
  • Degrease the spits and pans - Remove all of the internal spits and pans and clean them using degreaser. Make sure they are thoroughly wiped down to get all of the excess grease off.
  • Cleaning out the interior - Cover, protect or remove all ceramic pieces before starting to clean the interior surfaces. Spray the interior stainless steel surfaces with degreaser to clear up any leftover fat and grease. To clean the interior metal, use a steam cleaner or scrubbing sponge. Do not excessively use water while cleaning the interior as this could damage the insulation on the panels. 

Monthly Cleaning

While daily cleaning will help prevent and extend the lifetime of your machine parts, monthly cleaning will also help keep the oven from malfunctioning due to build-up.

  • Cleaning the burner openings - Every month you will want to check that the burners are working properly by cleaning up debris. Remove the ceramics and using a paperclip, clean any debris from the burner openings. 
  • Venturi air inlet gap cleaning - Following the operating manual, you will need to clean out the Venturi air inlet gap to ensure that the oven has a proper air/gas mixture. 

6 Month Cleaning

Every 6 months you will need to check that the shaft worm nylon gears properly move with the spit gears. Place a spit into each of the spit positions with the motor running. If any of the gears jump or do not align properly you will need to adjust them using an allen wrench. Be careful when tightening to not over-tighten any of the screws. Too tight screws could cause damage.

Yearly Cleaning

While it is far in the future, about every 12 months you will want to do some of these preventative maintenance procedures.

  • Inspect the spit plates - Check the spit plates and make sure that the brass oil lite bushings are in place for each spit position. If any are damaged or worn, replace them.
  • Checking the glass - Remove the glass and check for any scratches, chips or damage to the surface. If there is any damage or scratches the glass will need to immediately be replaced. Check the glass trolleys to see if they are worn and replace as needed. 
  • Grease sliding door tracks - For units that have sliding side doors, the upper and lower slides need to be greased every 12 months.
