Shutting Down APW Wyott, Bakers Pride & Star Brands Equipment

Certain situations require you to shut down commercial kitchen equipment for long periods of time. There are specific instructions you need to follow, so each unit is clean, safe and ready to operate at full speed when it's restarted. Below are decommissioning procedures for gas, electric and refrigerated units for the following equipment manufacturers:

Shutting Down Gas-Powered Equipment
- Step 1. Completely turn off all burner valves and thermostats.
- Step 2. Shut off the main gas valve that supplies gas to all equipment. This is the only way to eliminate the gas flow to each piece of equipment, including standing pilots.
- Step 3. Make sure all griddle tops and grates have a fresh coat of oil on them as this will eliminate any rust buildup that might occur over shutdown. Once the tops have been oiled, it's recommended to place wax paper or parchment paper over the surface to ensure oil doesn't evaporate.
Shutting Down Electric-Powered Equipment
- Step 1. Turn off the main power switch to the equipment. Unplug the unit from the wall receptacle. You also might want to turn power off from the breaker box.
- Step 2. Clean the interior and exterior with recommended methods per your owner's manual.
Shutting Down Refrigerated Equipment
- Step 1. Turn off the main power switch. Unplug the unit from the wall receptacle. (Note: This is only if the piece of equipment is NOT being used for food storage)
- Step 2. Clean the interior and exterior with recommended methods per your owner's manual.
Starting Up All Equipment
For startup, Middleby Corporation recommends that you make an appointment with your local authorized service agent on all equipment from the brands covered in this guide. This ensures that all gas regulators are adjusted to their factory settings and all thermostats are properly calibrated.
