From convenience stores to pizzerias, many commercial kitchens use TurboChef equipment to whip up pizzas in a hurry. To keep these ovens operating quickly and efficiently, routine maintenance is key. The following guide offers TurboChef pizza oven cleaning instructions for Fire, Double Batch and High H models.

Supplies You'll Need

TurboChef Fire Oven Daily Cleaning

The following daily cleaning instructions apply to the TurboChef Fire Pizza Oven:

  • Step 1. Turn the oven off – It's important that the oven stays cool. Press the ON/OFF key to turn the oven off. The entire cooling process will take about two hours. Don't clean the unit until it is completely cool to the touch.
  • Step 2. Wipe down the interior of the oven – Remove the oven's lower-access panel by unfastening the two thumbscrews. Remove any large food particles from the unit's interior, using a dampened cloth or vacuum.
  • Step 3. Clean the interior of the oven – Spray the area with TurboChef Oven Cleaner. Scrub the surfaces with a clean towel or nylon scrub pad. Avoid spraying cleaner into any holes or openings because it can damage internal components. Open the door and wipe down the interior of it. To clean stains, spray on cleaner and let it penetrate the area for 5-10 minutes. Scrub afterward with a clean towel or scrub pad.
  • Step 4. Rinse the interior of the oven – Use a damp towel to clean the oven interior and dry the oven interior with a separate clean towel. Don't use a hose or water jet during this process, so internal components aren't damaged.
  • Step 5. Clean the exterior of the oven – Reinstall the lower-access panel by fastening the two thumbscrews. Wipe down the exterior surfaces with a clean, damp towel.

TurboChef Double Batch Oven Daily Cleaning

The following daily cleaning instructions apply to the TurboChef Double Batch Pizza Oven:

  • Step 1. Turn the oven off – You must let the unit cool down before proceeding. Touch the OFF icons on the top and bottom oven screens. Open the doors and don't attempt to clean until both displays no longer read "Cooling Down."
  • Step 2. Clean the top and bottom racks – Once the interior is cool, remove the wire racks from the top and bottom ovens. Carefully wash them in a sink with warm water and oven cleaner.
  • Step 3. Clean the top and bottom grease filters – Remove the grease filters by lifting the handle and pulling forward. Wash and gently rinse the filters in a sink with hot water. Don't scrub or wash the filter with a water jet. This could cause damage.
  • Step 4. Clean the top and bottom cook chambers – Remove large food remnants with a dampened towel or food vacuum. Once clear, spray the top, bottom and side surfaces with oven cleaner. Avoid spraying cleaner into holes or openings because it can damage internal components. Scrub with a clean towel or nylon pad. For stubborn stains, spray cleaner directly on the spot and let it penetrate for about five minutes before scrubbing.
  • Step 5. Clean the top and bottom doors – Clean each door's metal surfaces with oven cleaner and nylon scrub pad. Then, clean the glass windows with a towel and oven cleaner. Don't use abrasive cleaners or materials like steel wool because they can scratch the surfaces or glass.
  • Step 6. Rinse and dry top and bottom doors – Wipe down the doors and windows with a clean, damp towel and dry off with a dry towel. During this step or the previous step, don't clean the door gasket. This can cause the doors to be knocked out of alignment.
  • Step 7. Apply oven guard – Spray oven guard onto a clean towel. Follow the instructions on the bottle for proper application on the interior surfaces. Avoid getting the oven guard into the holes or openings in the interior because it can damage internal components.
  • Step 8. Reinstall the grease filters and racks – Place the filters back into the proper positions on the top and bottom ovens. When reinstalling the wire racks, make sure the notches on the rear right and left sides fit over the pins on the sides of the chamber. This is important for proper operation.
  • Step 9. Clean the air filter – Remove the air filter from the oven. Rinse it in a sink with hot water. Make sure you don't scrub the filter because it can get easily damaged. Once cleaned, let the air filter completely dry and reinstall the air filter.
  • Step 10. Clean the exterior – Use a damp cloth to wipe down the exterior surfaces. Don't use spray chemicals on openings, including the side or rear louvers. This can damage internal components. Once cleaned, wipe down the exterior with a dry towel.

TurboChef High H Oven Daily Cleaning

The following daily cleaning instructions apply to the TurboChef High H Batch Pizza Oven:

  • Step 1. Turn the oven off – You must let the unit cool down before proceeding. Touch the OFF icons on the top and bottom oven screens. Open the doors and don't attempt to clean until both displays no longer read "Cooling Down."
  • Step 2. Clean the rack – Once the interior is cool, remove the oven rack from the interior. Carefully wash them in a sink with warm water and oven cleaner.
  • Step 3. Clean the grease filter – Remove the grease filter by lifting and pulling the latch out until the filter and bracket are flat. Take out the filter from the bracket and rinse it gently in hot water. Make sure you don't scrub or wash the filter with a water jet. This could damage it.
  • Step 4. Clean the cook chamber and door – Use a damp towel or food vacuum to remove large food particles. Remove stubborn stains by spraying oven cleaner on the spot and letting it penetrate for five minutes. Scrub with a nylon pad. Then, rinse with a damp towel and dry with a dry towel. After the chamber and door are clean, reinstall the grease filter and racks.
  • Step 5. Apply oven guard – Spray oven guard onto a clean towel. Follow the instructions on the bottle for proper application on the interior surfaces. Avoid getting the oven guard into the holes or openings in the interior because it can damage internal components.
  • Step 6. Clean the exterior – Use a damp cloth to wipe down the exterior surfaces. Don't use spray chemicals on openings, including the side or rear louvers. This can damage internal components. Once cleaned, wipe down the exterior with a dry towel.
