During certain times, you may need to fully shutdown your commercial kitchen equipment. In the event that you need to shutdown and restart your Ultrafryer unit, it’s important that you follow the manufacturer’s recommended procedures to ensure the fryer stays clean, safe and fully-functioning. If you need to shutdown or start-up your Ultrafryer fryer, follow the instructions below.

Ultrafryer Fryer Shutdown Procedure

  • Step 1. Filter the fryer(s).
  • Step 2. After filtration, drain the oil into a suitable container. Follow the manufacturer’s recommendation for storage of oil or dispose properly.
  • Step 3. Perform a Boil Out or Cold Soak on the fry tanks.
  • Step 4. Drain and thoroughly dry the interior of the fry tanks.
  • Step 5. Apply a thin film of clean cooking oil over the interior surface of the fry tank.
  • Step 6. Install the tank covers.
  • Step 7. Clean and thoroughly dry the filter pan and pickup assembly. Reassemble once completed.
  • Step 8. Disconnect power supply. For gas fryers, close the manual gas supply valve at the gas supply connection on the wall. For electric models, unplug the fryer.

Ultrafryer Fryer Start-Up Procedure

  • Step 1. Restore the power supply. For gas fryers, open the manual gas supply valve at the gas supply connection on the wall. For electric models, plug in the fryer.
  • Step 2. Remove the tank covers.
  • Step 3. Perform a Boil Out or Cold Soak on the fry tanks.
  • Step 4. Inspect all portable filters, filter drawers, crumb catches and other accessories. Clean thoroughly.
  • Step 5. Reassemble the filter pan elements, including new filter paper, and set in place.
  • Step 6. Fill fryers to the top about 1-inch below the “Oil Level” line with cold oil.
  • Step 7. Turn on the fryers.
