Vulcan combi ovens offer restaurants, hotels, cafes and other commercial foodservice spaces a convenient way to steam, cook, proof and roast all in one unit. Keeping your combi well maintained starts with regular cleaning, which ensures not only its sanitary but also its efficient operation. Daily Cleaning Tasks

  • Step 1—Remove large pieces of food debris from the oven cavity before starting to clean.
  • Step 2—Close the door to the combi oven, set the temperature to 190°F then set the timer for 10 minutes. Let the combi run for the set time as the steam will help with the cleaning process.
  • Step 3—Once the 10 minutes have passed, turn off the unit by pressing the rocker switch or by turning the temperature knob to “---”. Open the door of the combi and check for any areas within that will need to be cleaned either by wiping or with an OEM-approved cleaner. If a cleaner isn’t needed, proceed to Step 5.
  • Step 4—Spray the inside of the unit with an OEM-approved detergent solution, and let sit for 10 minutes. Do not use heat at this point.
    • NOTE—Do not use abrasive cleaners, chloride-based cleaners, acidic or harsh chemicals on the unit.
  • Step 5—Rinse the whole cavity thoroughly with filtered water from the spray hose until all residue has been removed.
  • Step 6—Mix a solution of mild soap and filtered water from the spray hose. Take a cleaning cloth moistened in this solution and wipe down the door gasket and glass.
    • NOTE—Do not use an abrasive pad or steel wool on glass or stainless steel surface.
  • Step 7—Rinse the door gasket and glass with a clean, wet cloth that’s been soaked in filtered water from the spray hose.
  • Step 8—Clear the drain cover screen of any debris, then rinse the cavity again.
  • Step 9—Leave the door open overnight and allow the interior cavity of the combi to air dry.

Weekly Cleaning Task

  • Step 1—As the combi is turned off, clean any cooling fans and air vents that are on the exterior of the unit to remove built-up dust.

Deliming Procedure

Deliming your Vulcan combi oven should be done on a regular periodic basis, depending on amount of use. Keeping your combi free of lime deposits helps with its overall performance, ensuring that it steams as it should.

  • Step 1—Spray the inside cavity of the combi oven with either white vinegar or an OEM-approved deliming product. Let it sit for 10 minutes. Do not apply heat.
    • NOTE—You can spray any interior part of the combi oven with the deliming product except for the glass. Immediately and thoroughly rinse glass with filtered water if deliming product gets on the glass.
  • Step 2—After 10 minutes, thoroughly rinse the entire cavity of the combi with filtered water from the spray hose until all residue has gone down the drain.
  • Step 3—Remove wire racks, rack guides and fan guard to clean hard-to-reach areas, Follow the same deliming procedure outlined above.
  • Step 4—Once the deliming process is done, reinstall the wire racks, rack guides and fan guard.
  • Step 5—Rinse the door gasket and glass with a clean, wet cloth that’s been soaked in filtered water from the spray hose.
  • Step 6—Leave the door open overnight and allow the interior cavity of the combi to air dry.
