Whether it's planned or unforeseen, temporarily closing a commercial kitchen requires specific measures. Vulcan combi ovens have shut-off and restart guidelines to prevent mold, damage and other issues from forming during idle periods. Below are instructions from our friends at Vulcan for shutting down and starting up its combi ovens.

Vulcan Combi Oven Shutdown Procedures

The following are shutdown instructions apply to all combi models:

  • Step 1. Clean the combi oven following instructions in the operator's manual.
  • Step 2. Keep the door slightly cracked open.
  • Step 3. Turn the water supply to the unit off. This is applicable for both filtered and unfiltered supplies.
  • Step 4. Shut down the water filtration system. On reverse osmosis (RO) systems, please drain the tank following the instructions in the RO system's manual.
  • Step 5. Turn the power source off. On gas models, shut off the valve or disconnect line and unplug the power cord. On electric models, shut off the circuit breaker or disconnect from the electrical connection.

Vulcan Combi Oven Start-Up Procedures

The following are restart instructions apply to all combi models:

  • Step 1. For kitchens idle for more than 30 days, set up an appointment with a qualified gas service technician to be onsite during the start-up process. Also, check all gas equipment in the kitchen for gas leaks.
  • Step 2. Reconnect the power source. On gas models, turn on the gas valve or reconnect the gas line. On electric models, turn on the circuit breaker or reconnect from the electrical connection.
  • Step 3. Install new water filtration cartridges. On RO systems, refill the tank following the RO system's manual.
  • Step 4. Follow the remaining start-up and cleaning instructions in the operator's manuals.
